This is similar to a lot of Chinese claypot dishes, and is really worth rolling out on a day when you have guests you want to spend time talking to rather than cooking for. It’s very, very tasty indeed, but it only uses one dish (or a rice cooker, if you happen to have one in the house) and doesn’t require any advance preparation or marinading. You’ll be using the food processor to blitz some chicken thighs into something a bit like a try rough chicken mince. Be careful when blitzing – you want small pieces of chicken, which steam to a really tasty, juicy result, rather than a smooth paste, which steams to a rubbery horribleness. The rice absorbs juices from the chicken along with all its seasoning, making for a really savoury dish.

I’ve been really pleased to see so many oriental ingredients make their way into even some of our…slightly rubbisher supermarkets. I found a jar of bamboo shoots in sesame oil when on an emergency tonic water run to Tesco. They’re great, and if you can track them down they’re well worth using, but if you can’t find them, substitute with canned shoots, rinsed well under the tap. All the other ingredients should be easy for you to get your hands on.

Texture’s a really important part of this dish. If you’re lucky, you’ll get a tasty crust at the bottom of the rice, created by the fat from the stock and the sesame oil which drips to the bottom “frying” the rice at the base of the dish. (Be sparing with the stock when you come to add the chicken mixture to increase the chances of a good crust.) The chicken will be soft from the steaming, and the vegetables, with their lower water content, will cook rather more slowly than the chicken surrounding them, leaving a lovely fresh crunch to things. As ever, use a home-made chicken stock if you have some in the freezer. If you don’t, I’ve had great success recently with the stuff Waitrose have been producing since their partnership with Heston Blumenthal, which is made with some kombu (a Japanese sea vegetable) for an extra umami kick.

To serve two (just multiply the amounts for more people and add an extra 5-10 minutes’ steaming time when you add the chicken for each extra portion) you’ll need:

370g jasmine rice
1 litre chicken stock
2 pieces of ginger the size of your thumb
12 spring onions
6 boneless, skinless chicken thighs
6 cloves garlic
3 tablespoons oyster sauce
2 tablespoons light soy sauce
2 tablespoons sesame oil
1 tablespoons Chinese chilli oil
75ml Chinese rice wine
100g bamboo shoots in sesame oil, drained
100g long-stem broccoli

Choose a Chinese claypot or a heavy saucepan with a close-fitting lid to cook the dish in. (You can also use a rice cooker – see below.) Combine the rice and 750ml of the stock in the pan with two of the spring onions, left whole, and one of the thumbs of ginger, peeled and sliced into coins. Put the lid on and bring the pan to the boil over a medium heat. Turn the heat down low and steam the rice for 20 minutes while you prepare the chicken.

While the rice is cooking, put the chicken thighs in the bowl of your food processor, and pulse gently and briefly until the chicken is chopped finely. Put the chicken pieces in a mixing bowl. Peel and dice the remaining ginger, mince the garlic and chop the rest of the spring onions and the broccoli into little pieces. Throw them in with the chicken, add the bamboo shoots, sesame oil, chilli oil, oyster sauce, rice wine and soy sauce, and use your hands to make sure everything is well combined. (I know, you hate touching raw chicken. Use a spoon if you must, but make sure everything is really well mixed.)

When the rice is ready, it’ll have little holes in the flat surface. Spoon the chicken mixture on top of it, pour over the remaining 25ml of stock, and stick the lid back on. Steam over the low heat the rice cooked at for another 25 minutes, and serve.

If you plan on cooking this in a rice cooker, just cook the rice with the stock, ginger and spring onions under the normal white rice setting, then set it to steam for the required amount of time. If your cooker doesn’t have a steam setting, just set it to “keep warm” when you’ve added the other ingredients, which should provide enough heat to steam the topping, but may take a little longer.

Sesame ginger chicken wings

My Dad always taught us that the best part of the chicken was the wings. The flesh in the wing is sweet from its proximity to the bone, delicate, and lubricated with plenty of flavour-carrying fat from the skin that covers it. Accordingly, we used to fight over the wings every time a chicken appeared on the dinner table, occasionally with our cutlery. Ours was a savage household.

Dad’s Chinese, and this is the kind of comfort food he used to rustle up for us when everybody else’s Dad was frying mince with baked beans. I used to take great pride as a little girl in helping out – slicing the garlic, chopping the ginger, carefully mixing the cornflour into some cold water, and watching, fascinated, as he whirled around the kitchen with a wok and a pair of chopsticks. You can’t beat the cosmopolitan nature of the food education my brother and I got from my parents: Mum’s wonderful meals were from Jane Grigson, the Roux brothers and Elizabeth David, and Dad’s all did something fabulous with soy sauce. Alongside lengthy gastronomic holidays in France, where my brother and I were expected to sit quietly for hours in restaurants with endless cutlery and a million cheeses while Mum and Dad bibbed and tucked (and we did – there’s still little I find as fascinating as my very own slab of foie gras), there were the frequent visits to Malaysia, where food is as important to the national psyche as football is in Britain. Back in the UK, there were regular and keenly looked forward to family trips to London’s Chinatown, which, at the time, was the only place you could find ingredients like sesame oil, chilli sauces and tofu – even ginger was sometimes hard to find in 1970s Bedfordshire. There were bribes of candied winter melon and sesame caramels for the kids, and Dad swiftly made friends with all the local Chinese restaurateurs. We met Kenneth Lo once at a garden party when I was about six. Dad didn’t stop talking about it for weeks.

While most wing recipes you’ll find will have you grill or fry the wings so they are crisp, this Chinese method will have you simmering them in an aromatic, savoury sauce. You’re best off eating these with a knife and fork; fingers will be a bit messy. The popularity of chicken breasts and legs, all neatly pre-jointed, means that there are a lot of surplus wings kicking around out there, and you’ll likely find that you can buy them very cheaply (I prefer the butcher’s wings to the boxes from the supermarket, because I’m more confident about their origin) – this is a good budget dish for the end of the month.

I like to remove the wingtips, which don’t yield any meat, with a pair of poultry shears, and use them to make stock. This isn’t absolutely necessary – if you’re in a hurry, leave yours on. And although my Dad would use a wok to make this, I find a large casserole dish a bit easier, not least because it’s an even depth and comes with a lid.

To serve two, you’ll need:

800g chicken wings
1 teaspoon sugar
½ teaspoon freshly ground black pepper
½ teaspoon salt
2in piece of ginger
2 cloves garlic
12 spring onions, chopped and separated into green and white parts
75ml sesame oil
100ml soy sauce
Water
2 teaspoons cornflour
Groundnut oil to fry

Half an hour before you start to cook, sprinkle the salt, pepper and sugar over the chicken wings, mix well, and set aside.

Heat a couple of spoonsful of oil in your pan, and brown the wings on each side. You may need to do this in a few batches, depending on the size of your pan. When they are browned, return them to the pan with the chopped garlic, the ginger, cut into coins, and the white part of the spring onions. Keep stirring carefully for a minute until the garlic, ginger and onions start to give up their aroma – be careful not to break the skin on any of the wings.

Pour over the sesame oil and soy sauce, and reduce the heat to a low flame. Add water to cover the wings, stir to combine everything, and bring slowly to a simmer. Put a lid on the pan and cook, stirring occasionally, for 12 minutes.

Combine the cornflour with a little cold water. Remove the lid and stir the cornflour mixture through the dish. Continue to simmer until the sauce thickens. Stir through the green part of the spring onions, reserving a little to scatter over the finished dish, and serve with steamed rice and a stir-fried vegetable.

English food gets a bad rap in a lot of areas, but there’s one thing we’re world-class at: nursery puddings. A good bread and butter pudding is a joyous thing; a layer of spongey, custard-dense bread at the bottom, sweetness and flavour from a careful sprinkling of preserved fruit (I like juicy, tea-soaked sultanas and little cubes of stem ginger), and golden, caramelised points of crisp bread decorating the surface.

It’s unfortunate that so many of us were exposed to disastrous variations on the bread pudding theme when we were children. School dinners and rushed grandmothers are responsible for plenty of adult nightmares about gloppy flat puddings, studded with bits of wobbly egg, a nasty rubbery skin stretched over a sheer surface. There are a few things you need to do to ensure you avoid these problems when you’re making your own bread and butter pudding.

Firstly, and all-importantly, the bread shouldn’t be submerged in the custard. Don’t drown everything in custard, and construct your pudding so that points of buttered bread, moistened with the egg and milk and brushed with a little syrup and sugar, caramelise and crisp in the heat of the oven.  And when you make that custard, beat the hell out of the egg. Nothing is more squick-inducing than a gelatinous chunk of eggwhite in the middle of your dessert plate.

For an entirely non-squicky pudding to serve between four and six, depending on greed, you’ll need:

8 slices good white bread, crusts left on
30g softened, salted butter, plus extra to grease the dish
30g caster sugar, plus one tablespoonful
3 large eggs
500ml milk
50g sultanas
50g stem ginger chunks – reserve the syrup
1 strong cup of your favourite tea
Nutmeg to grate over

Preheat the oven to 180°C (350°F). Make a very strong cup of hot tea without milk (make another for yourself) and soak the sultanas in it until you’ve finished buttering the bread and arranging it in the dish.

Cut the slices of bread into quarters diagonally, and butter them on both sides. This is an excellent way to use up stale bread – in fact, you’ll find the stiffer slices of slightly stale bread easier to handle than soft, fresh bread.

Arrange the buttered slices of bread fish-scale style in a buttered rectangular dish measuring about 20x30cm, the crust sides touching the base of the dish and the soft points pointing upwards. The bread triangles should be snug in the dish, but need a little space between them; overlapping three per row works well.

Drain the sultanas and chop the pieces of ginger into sultana-sized dice. Sprinkle them over and between the points of bread.

Beat the egg thoroughly with 30g of sugar in a jug. Use a whisk rather than a fork, to make sure the egg is properly beaten. Pour the milk over the egg and sugar and whisk it thoroughly to make sure everything is properly mixed.

Pour the custard (because that’s what it is now) carefully over the bread, being sure to moisten all of the points with the mixture. Brush the syrup from the ginger pieces over the exposed surfaces of the bread, and sprinkle with another tablespoon of sugar. Finish with a generous grating of nutmeg.

Bake, uncovered, for 35 minutes. The bread points should be golden brown and crisp – if you think they could do with a little more colour, leave in the oven for another 5 minutes before checking again. Serve hot or warm with plenty of cream. This pudding is best on the evening it’s made, when the top will be deliciously crisp.

Gingerbread

Massive apologies for the gap in posting. Something dreadful happened: Dr W bought me a copy of Spore, and my week subsequently vanished. It wasn’t just the week that disappeared – with it went my ability to sleep or get anything besides evolving, building cities, murdering pirates, searching for the Grox and colonising several star systems done. Still – I’m back now, and the really good news is that next week I will be blogging from Montreal, where I’ll eating at Toque! (apparently one of Canada’s best restaurants), Au Pied de Cochon (foie gras, duck, pigs’ feet, poutine), Schwartz’s Charcuterie Hebraique and plenty of other interesting spots, as well as hunting down some markets and delis. Spore is not coming with me to Montreal, so I’m all yours. This time, I’ve booked a suite hotel, specifically because it came with a kitchen. How many times have you been on holiday and found yourself antsy because you don’t have a fridge or oven to keep or cook that amazing and fascinating thing you found someone selling?

Anyway. Onto the gingerbread. This is a southern English gingerbread, not the northern parkin, which usually includes oatmeal along with the treacle. This gingerbread is a lovely dense, moist, dark cake, which will keep perfectly for more than a week if you wrap it tightly in greaseproof paper and tinfoil. Don’t eat this on the day that you make it – wrap it up and put it to one side for a day, and your gingerbread will become even moister and stickier overnight.

The pieces of crystallised ginger will sink in the tin, but this actually creates a very pretty jewel-like layer of ginger at the bottom of the gingerbread loaf. Turn it upside-down to serve so the jewelled surface is on top. To make gingerbread to fill a 1l loaf tin, you’ll need:

110g golden syrup
110g treacle
110g soft brown sugar
280ml milk
230g self-raising flour
1 ½ teaspoons bicarbonate of soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 teaspoon ground mixed spice
110g salted butter
1 egg
150g crystallised ginger in syrup, drained and chopped

Preheat the oven to 180°C (350°F).

Grease the bowl of your weighing scales, and measure out the treacle and syrup. Pour them into a saucepan (patting yourself on the back for having had the foresight to grease the bowl) and warm gently, until the mixture reaches body heat. In another pan, dissolve the sugar in the milk over a low heat and set aside.

Sieve the flour, spices and bicarb together, and rub the butter into the mixture, as if you were making pastry, until you have a fine mixture resembling breadcrumbs. Add the ginger pieces and mix thoroughly. Use a balloon whisk to beat the milk and sugar mixture, then the treacle and syrup mixture, into the flour. Finally, beat the egg into the gingerbread batter with your whisk.

Pour the mixture into a greased and lined loaf tin, and bake for 1-1¼ hours, until a toothpick inserted into the middle of the gingerbread comes out clean. Cool in the tin, turn out and wrap tightly for 24 hours before eating.

Rhubarb and ginger vodka

The rhubarb has come into season now. We don’t have enough room for a rhubarb crown in the garden, but when I was a kid, my parents had a large patch of it, the centre of which lurked under an upturned metal bucket in the early spring to force the pink stems. Gorgeous stuff, and I picked up a muddy armful at the market to make cake with this week, then found I had plenty left over. What better to do with it than turn it into a gorgeous pale-pink liqueur?

Here, much like the sloes in sloe gin, the rhubarb steeps for a couple months in sugar and alcohol, giving up its flavour and colour. I’ve also added ginger (rhubarb’s natural friend) and the zest of a lemon to the pot for extra zing. I’m afraid you’re going to have to restrain yourself for a couple of months before this is drinkable, but it’s well worth the wait.

For every litre of vodka you use, you’ll need:

600g rhubarb
300g caster sugar
3 inches of ginger root
Zest of one lemon

Pour the sugar into the bottom of a large jar (it should have at least double the capacity of the amount of vodka you’re using, and be airtight). Clean the rhubarb and slice it into 1-inch chunks and put it in the jar on top of the sugar. Slice the ginger (no need to remove the skin) into coins, and toss it in along with the zest of a lemon, pared carefully with a knife into wide strips.

Pour over the vodka, shake or stir well, and seal the jar up. Leave it at room temperature (it’ll be fine sitting on a shelf in the kitchen) for two months, at which point the rhubarb will look disgusting and grey, having given up all its juice and colour to the now pink vodka. Strain the mixture through a sieve lined with muslin into bottles. This liqueur is even better if you leave the finished bottles to mature for six months or so, but can be also drunk immediately.

Sticky chicken pieces in coke

One of the recipes on this blog that gets more hits than almost all the others is the ham in Coca Cola recipe I posted a couple of years ago. (Do try it if you haven’t yet – it really is good.) This means that my ears pricked right up last week when talking to a couple of Chinese friends, who were discussing a Chinese student recipe involving chicken wings, a wok and some coke; a delicious but extremely easy recipe, apparently impossible to mess up through student drunkenness.

I had a play with some bits of chicken (thighs rather than wings here, because that was what was in the fridge), soya sauce, ginger, garlic and coke when I got home, and I’m really pleased with the results. If you enjoy Malaysian cooking, with its propensity for sweetness in savoury dishes, you’ll love this; the sweetness is balanced by the dark spices from the coke, the zing of the chilli and some lovely aromatic ginger.

Make sure you buy full-fat coke, not the diet stuff. Diet cola will not work here – the sauce won’t thicken as it caramelises, and you won’t achieve any sweetness from it because the aspartame will degrade and taste revolting.

To serve two, you’ll need:

4 chicken thighs (or other chicken joints with the bone in and the skin still attached)
Coca Cola to cover
4 cloves garlic
1 piece of ginger, the size of your thumb
1 red chilli
4 tablespoons light soya sauce
2 tablespoons cider vinegar
Salt and pepper
Vegetable oil

Pat the chicken dry with kitchen paper and sprinkle with a little salt and pepper. Leave to one side while you slice the garlic finely and cut the peeled ginger and the chilli into matchsticks.

Heat a little vegetable oil in a wok or a large pan over a high flame, and fry the chicken pieces until the skin is beginning to brown. Add the ginger, chilli and garlic, then stir fry for a minute. Pour over the cola so the chicken is covered, and add the soya sauce and the vinegar.

Put a lid partially over your wok or pan, making sure that you leave a gap at one side for plenty of steam to escape. Turn the heat down to a medium setting when the cola begins to simmer, and leave, turning the chicken occasionally, for about half an hour (depending on your pan), until the coke has reduced by more than two thirds and the liquid in the pan is syrupy. Serve immediately with rice, a little chilli sauce and a sharply dressed salad.

Slow-simmered Chinese beef and fried rice

Slow braising in soya sauce is one of the best things you can do with stewing meat, making it scented, tender and melting. Here, I’ve used some whole spices, oyster sauce, sugar, garlic and ginger to turn some cheap cubes of stewing beef into meaty gold.

To accompany it, I’ve broken out my packet of Chinese sausages (lap cheung). These are a sausage rich in pork fat, sugar and anise, preserved by wind-drying. You can buy two kinds of Chinese sausage; these, which are red in colour and made from pork and pork fat, and the darker ones, made from duck meat and liver. I’ve put the rest of the packet in the freezer, to use another day in some steamed rice. Today’s sausage is going in some stir-fried rice.

The beef is easy – all its deliciousness comes from long, slow simmering. You’ll need:

1 lb cubed stewing beef
1 bulb of garlic, halved
3 slices ginger
2 dried chilis
2 stars of anise
1 stick of cinnamon
2 tablespoons sugar
2 tablespoons oyster sauce
2 tablespoons soya sauce
1 wine glass Chinese rice wine
1 teaspoon sesame oil
Water to cover

Put all the ingredients in a heavy-bottomed pan and simmer very gently for two to three hours, until the meat is tender. Top up with water if the pan starts to look dry.

The fried rice is full of simple, assertive flavours. I used:

4 Chinese sausages, sliced thin
3 cloves of garlic, sliced
2 inches peeled ginger, julienned (cut into matchsticks)
8 spring onions, sliced into circles
1 pack shitake mushrooms, sliced
1 large handful frozen peas
1 large bowl cold, pre-cooked rice
2 eggs
1 teaspoon sesame oil
2 tablespons soya sauce

Stir fry the sausage slices, moving everything round quickly over a high heat until they give up some of their fat, then throw in the garlic, ginger and spring onions and stir fry for three minutes. Add the mushrooms and peas and continue to stir fry until the mushrooms are soft and cooked. Crumble the rice with your hands into the wok. It’s vitally important that the rice is cold from the fridge; warm rice will go gungy and come apart. Cold rice will keep its grains whole and keep its texture. Stir fry the rice until it’s all piping hot, then make a well in the middle so you can see the bottom of the wok, break the eggs into it and use your spatula to scramble them in the well. Stir the cooked egg into the rest of the rice, add the sesame oil and soya sauce, stir fry for another twenty seconds, and serve.

Ginger beer

The house is still full of Christmas food. There’s a profusion of citrus fruits and spices, along with the multitude of empty soft drink bottles (my in-laws don’t drink alcohol, but they drink fizzy drinks by the gallon). Time to make some ginger beer.

Ginger beer is another old-fashioned English recipe from the 1700s, fermented with yeast. (Teetotalers shouldn’t be worried about this; yes, there’s fermentation, but the finished product is only about as alcoholic as bread dough.) The method I’m using is a quicker one than that in the traditional recipe, where you’d be feeding a ginger beer ‘plant’ (a yeast culture) with sugar for a week. Here, the ginger beer is still fermented with yeast, but it’s instant bread yeast from a packet, and the fermenting is done in a couple of days or less, depending on how warm you are able to keep the bottle.

A word of warning. Do not use a glass bottle. Plastic is very helpful here because it can stretch and flex, and when the gases in the drink are produced, the bottle will not shatter under the stress as glass might.

For a spicy home-made ginger beer, you’ll need:

2-litre plastic soft drinks bottle
1 cup sugar
3 thumb-sized pieces of ginger
1 lime
1 orange
1/4 teaspoon instant yeast
filtered water

Peel and grate the ginger (use fat pieces if you can find any; they will be jucier) and extract the juice from the fruit. Using a funnel, put the sugar and yeast into the bottle, followed by the ginger and citrus juice. Fill the bottle up to the half-way mark with filtered water and give it a good shake with the lid on until the sugar has dissolved. Top up the bottle with water until there’s about an inch of airspace at the top of the bottle, squeeze this air out and put the lid on as tightly as you can.

Leave the bottle in a warm place (aim for around body temperature – mine went on top of a radiator cat bed, to mews of disgust from the kittens) for between 24 and 48 hours. You’ll know when it’s done because the bottle will have swollen, and dents where you squeezed the air out will have vanished. The bottle will be hard to the touch. Loosen the lid carefully to let out some of the gas, and screw everything up tightly again. Refrigerate the ginger beer (keep any you don’t drink in the fridge, which will stop further fermentation) and strain through a sieve before drinking.

Those who don’t have piles of citrus and ginger lying around the house and who can’t wait two days for their drink might want to buy some ginger beer instead. Try Fentiman’s for an authentic and very spicy drink.
