RUB BBQ, Chelsea, New York City

So in the end, I didn't update at all during my visit to New York - apologies if you were checking, but I hope you'll understand. This was my first trip to the city, and I found myself doing things a long way from my hotel room from the moment I closed the door every morning until I collapsed, exhausted, into the Kitano hotel's cloudlike embrace every night. Simply put, there is an awful lot of very entertaining stuff to do in New York, from the museums, the architecture, the shopping, the jazz - and the very, very good food - and I found myself much too busy enjoying myself to blog.

RUB BBQ (an acronym, this; spelled out, RUB means Righteous Urban Barbecue) is...well, righteous, and urban, and a barbecue joint. (208 W. 23rd St., New York, NY 10011, nr. Seventh Ave.) I do like restaurants which tell you what they do on the tin. This place is about Kansas City-style barbecue: fat, woodsmoke and the charred crispy bits best eaten when you are young and not prone to heart attacks. It's no-nonsense food, served up in no-nonsense style on waxed paper dishes with pickle chips and hunks of sweetly pappy Wonder Bread - a strangely good accompaniment for smoky, salty, spicy barbecue. Leave any dietary concerns at the door, because the best stuff on offer here is unshamedly fatsome and entirely lacking in vegetably vitamins.

The meat is freshly smoked daily in set quantities, and this sometimes leads to certain items running out surprisingly early in the day (on our first visit they'd already run out of burnt ends by 6pm). I'm not sure whether this is a dastardly ploy to get you back in the door in the hope of finding what you were after - if it is, it certainly worked on me.

There is an appetiser on the menu called BBQ Bacon Chunks. I like bacon, I like barbecue, and I am partial to the sort of food that comes in chunks, so this was a no-brainer. A waxed paper dish of triple-smoked, thumb-sized rectangles of obscenely fat belly pork turned up, cooked to a melting crisp. "Good God, these things must be bad for you," said Dr W, popping them in his mouth one by one in a sort of porky trance. "Mmmurgle," I agreed.

Burnt ends are the blackened, fatty end of a beef brisket, cooked until the fat metamorphoses into a charred and friable, tender magic. Portions here are large, and I am still not quite sure how I managed to absorb a whole plate of the things into my person, but the burnt ends were one of those things it's simply impossible to stop eating. Szechuan smoked duck was good, but not as good as the pork and beef on offer. Its mahogany, lacquered skin was simply gorgeous, all the fat underneath rendered out, but the meat was uninteresting, and not as moist as it could have been.

Table sauces include two barbecue sauces, one mild and one spicy, ketchup and vinegar. The pulled pork (see my recipe for pulled pork here) needed a good dollop of barbecue sauce to liven it up, but once it had been anointed was tender and tasty, with some lovely BCBs (Burnt Crispy Bits). Brisket from further up the joint than the burnt ends was leaner, and Dr W's favourite cut on offer. He tiled the tender slices on a piece of Wonder Bread, added some of that spicy barbecue sauce and ate the whole thing as a sort of heart-attack sandwich. What's going on here? Wonder Bread in its natural state is a soft, sugary abomination, but is weirdly delicious presented like this. Perhaps there is something in the rub.

Because if there is something in the rub, the rub itself is in everything. On every meat, and it also found its way into all the accompaniments we tried - onion strings were battered and fried, then sprinkled with the sweetly spicy rub. It flavoured the coleslaw (making it too sweet for my tastes - but you may wish to ignore what I have to say here, given that pieces of bacon fat the size of my thumb are to my tastes), was scattered all over the fries, and spiked the beans. Those beans beat me - they just tasted too much to enable us to eat more than about a spoonful each, and that rub really made them sweeter than I could manage.

Staggering out of RUB after our second visit, five times fatter than I was when I went in the first time, I found I had a greed-induced stitch in my side, and so stopped in a café to recover. Gazing out of the window, I locked eyes with Rupert Everett, craggily walking a dog. Glorious barbecue and surprise movie stars. I really like this city.

Chetco River Inn, Brookings, Oregon

Sometimes, amazing things just fall into your hands. We had to make our way from Portland down to Lake Tahoe a couple of weeks ago, and needed a staging post to split the journey up into two (very long) days' drive. I grabbed a map, found a town about halfway between the two places, looked it up in a guidebook and booked a night in the first likely-looking B&B.

I wish I'd booked a whole week.

The Chetco River Inn (21202 High Prairie Road, Brookings, OR, 97415 - email chetcoriverinn@hughes.net, tel. (541) 251-0087) is an utterly charming bed and breakfast in the middle of one of the Pacific coast's temperate rainforests. These forests are magical: so damp that the all the trees are festooned with mosses and sharp-tongued ferns, they teem with wildlife. To reach the inn, you'll need to drive 20 miles down a narrow road, un-metalled in places, with dripping trees overhanging the roadway and the pristine Chetco river bubbling alongside. The inn itself is perfectly positioned in glorious isolation by the river, and is popular with botanists, with hikers and with fishermen, who arrive for the salmon run in the autumn and stay over the winter for the steelheads. If you are lucky, you'll find fish fresh from the river on the inn's dinner table.

We arrived just in time for supper, and Sandra and Clay, the owners, were waiting for us at the inn with their Scottie dogs and a vat of steaming French Onion soup. We found ourself enjoying this and a beautifully prepared, enormous prime rib with a fishing group, who shared their wine (Oregon's Pinot Noirs are particularly good, and we had a great time sampling them) with us in return for some of the microbrewery beer we'd brought down from Portland. Sandra's freshly made banana ice cream was a rich and custardy end to the very generous meal.

We'd booked the cottage at the inn, a separate building only a few years old with accommodation for four. (These photos are taken about twenty paces from the cottage's front door.) This lovely little cabin will sleep two downstairs, where there is a large jacuzzi and well-stocked bathroom; and two in a wonderfully comfortable king-sized bed up on a mezzanine level, overlooking the living area and kitchen. We had the place to ourself, and had one of the most romantic evenings we've ever experienced, falling asleep to the light flickering from the log stove which heats the cottage, and the sound of the dripping trees and night birds.

The weather in the Siskiyou National Forest is always wet but wonderfully atmospheric, with rains for most of the winter - temperate rainforests do not freeze in the cold months, and you'll find surprisingly warm, sunny days in the middle of the coldest months - and mists in the cool summer. We got up before dawn for an early breakfast so that we could watch the steel-grey, winter light rise over the river, the clouds boiling and rolling off the forest. Sandra and Clay prepare a breakfast of legendary proportions. A sugar-dusted, maple syrup-soaked Dutch baby pancake, sausages, delicious home-fried potatoes and gallons of good coffee and juice set us up for a walk along the riverside. In a couple of hour's gentle stroll along the shingle we'd seen an otter, an elk and a simply astonishing selection of birds. (Sandra informs me that the otters are surprisingly tame, and that summer guests who swim in the river, which is the United States' cleanest, will often find the otters swimming alongside them.) A short drive away you'll find Oregon's exceptionally scenic Pacific coast, where the beaches are often deserted, while a little further south are the giant redwood forests.

This place is paradise. I'm already planning our next trip.

Elvis sandwich

fat Gordon BrownOn hearing yet more government waffle about obesity (surely a delicious, cinnamon sugar-dusted waffle) on the radio yesterday morning, I felt moved to action. Especially when Gordon Brown announced that access to the NHS should be rationed for the fat. This seems somewhat hypocritical. Gordon Brown's own flabby udders are usually concealed by a well-cut suit, but do spare a moment to compare his wobbling great jowls with those of the undeniably fat Vegas-era Elvis (who is the one a bit lower down on the right, in case there was any confusion). I have been kind here. This was not the least flattering photo of Gordon I could find.

Vegas ElvisThe obese pay as much National Insurance as you or I do, and conditional access to a service that we all pay for is a truly alarming idea - my guess is that Gordon's trying to make sure the NHS reaches its targets by ensuring it has no patients at all. Only last month, the House of Lords, which surely has better things to do with its time, had a debate on restricting the sale of thick-sliced bread so that our packed lunches are less fattening. What better way, I thought, to stick two fingers up at the lot of the buggers, than to use some thick-sliced bread to make one of Elvis Presley's favourite, most deadly sandwiches - and to encourage you to too?

Elvis was a man of huge appetites. He was particularly big (if you'll pardon the pun) on very large, very calorific sandwiches involving peanut butter. Legend has it that when visiting Denver, he ordered 22 Fool's Gold sandwiches from the Colorado Mine Company restaurant (now closed) to be delivered to his aeroplane for the trip home. These sandwiches cost $49.50 each back in 1976. Each one was made from a single French loaf, hollowed out and rubbed generously with margarine. The greasy loaf was coated with peanut butter, baked until the bread was crisp and the peanut butter runny, then adorned with a pound of crisp bacon and a whole jar of grape jelly.

I decided not to recreate the Fool's Gold sandwich, because it seemed a sure-fire route to an untimely death on the toilet. Back at Graceland, however, a favourite snack (snack!) was the fried peanut butter and banana sandwich, which comes in at a relatively modest 750 calories. I used the canonical recipe, which uses an unholy amount of butter, as described by Mary Jenkins Langston, Elvis's own cook. Now, I am a fan of peanut butter, of white bread, of bananas and of butter. But I have to tell you that I wasn't able to eat a whole one, and that as I write this I am feeling distinctly unwell and am clutching at a glass of Alka Seltzer.

peanut butter and banana sandwichThis is largely because of the huge amount of butter that goes into this sandwich - two US sticks of the stuff (that's eight ounces) for every three sandwiches. As Mary herself said, Elvis was very, very keen on good old fat:
''For breakfast, he'd have homemade biscuits fried in butter, sausage patties, four scrambled eggs and sometimes fried bacon,'' she said. 'I'd bring the tray up to his room, he'd say, 'This is good, Mary.' He'd have butter running down his arms.''
Of the sandwich, she said:
''It'd be just floating in butter. You'd turn it and turn it and turn it until all the butter was soaked up; that's when he liked it."
It wasn't drugs that killed Elvis. It was Mary's cooking.

To make one sandwich (do not, under any circumstances, attempt to eat the whole thing yourself, because you'll make yourself sick) you'll need:

1 large banana
2 slices white bread
Peanut butter
2½ oz butter

banana sandwichToast the bread lightly, and spread both slices thickly (I know, I know, but Mary says 'thickly', so thickly is how I am spreading) with peanut butter. Slice the banana into coins and layer them on top of one peanut-slathered slice of bread, then put the other on top, pressing so the whole thing sticks together.

Melt the butter in a non-stick frying pan or cast-iron skillet and heat it until it foams. Slide the sandwich in and fry it, turning frequently (important, this turning, or else you will end up with a hunk-a hunk-a burning sandwich) for about five minutes, until the centre is heated through and the lake of butter absorbed.

Eat with a knife and fork, a glass of antacid, and intimations of mortality.

Corned beef hash

This breakfast recipe is subject to another of those language difficulties that occasionally pop up when writing about American food in Britain. Here in the UK, when we say corned beef, we always mean the fatty stuff in trapezoidal tins that your Mum used to put in sandwiches with Branston pickle for your packed lunch. In America, corned beef can refer to the stuff in the cans, but usually means something more like what we in the UK call salt beef - a slab of beef brisket which is salted and preserved. ('Corned' means treated with corns, an archaic word for coarse grains of salt.) You can make this recipe with either kind of corned beef, but if you have the 'fresh' sort (from a deli, and not out of a tin), you'll need to chop it finely before you begin.

Those trapezoidal tins have a long history - they were originally produced as military supplies, and British soldiers were eating corned beef in the Boer war. I wonder how handy bayonets are for opening tins. These days, tins of corned beef are really easy to find in the supermarket, and are very inexpensive. This is a really, really cheap dish to make, coming in at under £1 a head, and you may already have all the ingredients in your storecupboard. It's also absolutely delicious, and a great breakfast to set you up for an active day ahead.

Finally, a word on the eggs. I used very fresh hen's eggs, but this is an occasion where it's really worth trying to get your hands on duck eggs, which are big, delicious and somehow very well suited indeed to this recipe. Some butchers carry duck and goose eggs - ask next time you visit.

To serve two, you'll need:

2 baking potatoes, scrubbed but not peeled
2 large onions
1 can corned beef
1 tablespoon Worcestershire sauce
1 tablespoon chilli sauce (I used Sriracha - see below)
1 tablespoon Angostura bitters (use a tablespoon of vermouth if you don't have any)
½ teaspoon onion salt
¼ teaspoon thyme
½ teaspoon paprika
¼ teaspoon ground cumin
8 twists of the pepper mill
1 tablespoon fresh parsley, chopped finely
4 eggs
Olive oil


Chop the corned beef into 2cm cubes and mix thoroughly with the herbs, spices, Angostura bitters, Worcestershire and chilli sauces. Choose a reasonably sweet chilli sauce with a good amount of garlic in it - Sriracha is great here, but experiment with other sauces if you have a particular favourite, and use more or less if you prefer extra heat or a milder dish. Set aside while you prepare the onions and potato.

Chop the onions in half and slice each half finely. Heat about a tablespoon of olive oil over a high flame in a non-stick pan, and tip the onions in. Chop the potatoes, with their skin, into 2cm cubes. Continue to fry the onions until they begin to take on colour, then add the potatoes to the pan with a little more oil. Keep stirring every minute or so.

When the potatoes are cooked through and are turning brown at the edges, and the onions are brown and caramelising (about 15 minutes), add the beef mixture to the pan. Stir thoroughly and turn the heat down to low. In another pan, fry the eggs. (I like mine with set whites and lovely runny yolks to mix into the hash.) Turn out the hash onto hot plates, and place two eggs on the top of each portion. Eat with toast and a big mug of hot coffee.

Pulled pork

This is a wonderful American way with pork. Barbecue purists (a curiously wonderful breed made up entirely of American men - I have never met a woman or a non-American who takes the barbecue quite as seriously as these guys do) should haul out their smokers for this recipe. One team at the American Royal Barbecue championship last year had a smoker made from the body of a Cessna aeroplane.

I used my oven and added a tablespoon of liquid smoke at the end.

The smoke flavour in this recipe is a great addition (UK cooks can buy liquid smoke online - I haven't found a brand I've not enjoyed, but Colgin makes a particularly good version). All the same, if you don't have access to a small adapted aircraft or liquid smoke, you shouldn't worry. Your pork will still have a wonderful, barbecue sauce flavour.

In the US you'd use pork butt (actually shoulder) for this recipe. In other countries like the UK we butcher pigs rather differently, so just find a nice, fatty, boned piece of shoulder if you can't get your hands on the exact cut. The fat is important; the joint cooks for a long time and its fat will baste it from within and keep the meat delectably moist.

To serve about six people you'll need:

One boneless pork butt or boneless shoulder (about 3 lb)
4 tablespoons soft light brown sugar
2 tablespoons coarse salt
2 tablespoons paprika
2 tablespoons cinnamon powder
1 tablespoon mustard powder
10 turns of the peppermill
1 tablespoon chilli powder (I used chipotle chilli powder for the smoky taste, but you can use your favourite)
1 teaspoon coriander powder
1 teaspoon onion salt
12 fl oz (1 ½ cups) apple juice
6 fl oz (¾ cup) water

Mix all the dry ingredients in a large bowl, and rub them thoroughly all over the pork in the same bowl. If your cut of meat has been boned and rolled, you can push some of the rub into the space where the bone used to be as well, seasoning the meat inside and out. Leave the meat in the bowl and leave, covered, in the fridge overnight.

About six hours before you want to eat, preheat the oven or smoker to 150° C (300° F). Place the pork joint, skin side up, on a rack in a roasting tin. Pour the apple juice and water into the bottom of the tin. (The liquid should not be touching the meat.) Cover the roasting tin tightly with a few layers of tin foil and place in the oven for five hours. Don't poke at the pork while it's cooking; it should be left to steam gently in its tinfoil hat.

When the five hours are up, remove the tinfoil. If the liquid in the pan looks like it might dry up, add a wine glass of water. Turn the heat up to 200° C (400° F) and cook the joint uncovered for half an hour. Remove the meat to a large bowl, keeping the juices in the bottom of the roasting tin.

Use two forks to shred the pork. It'll come to pieces very easily after the long cooking time, and should be moist and delicate with a slight crisp to the outsides. Place the shredded pork in a large frying pan with all its juices and the liquid from the roasting tin. Add another tablespoon of soft light brown sugar, an extra teaspoon of chilli powder if you want some extra kick, and a tablespoon of liquid smoke if you can find some (I like applewood liquid smoke for this recipe). Cook over a medium heat until the liquid in the pan begins to become syrupy.

Serve the pork with its sauce in toasted burger buns. The pork will keep in the fridge for a couple of days. Sweetcorn, coleslaw and other traditional barbecue accompaniments make a great side dish. Try not to get too much down your front.

Buffalo wings

Another item from the Great American Suitcase Load of Food I brought back last February was a large bottle of Frank's Hot Sauce. Frank's is the traditional sauce used for gorgeous, buttery, spicy Buffalo wings; unfortunately it's hard to find the dish or the sauce readily in the UK, so you'll have to resort to importing sauce and making your own wings.

We're in luck; chicken wings, being bony and a little unprepossessing, are not something the English, who seem to prefer meat that comes in boneless, skinless chunks, buy very often. While they're usually available in the shops, they're not expensive. This is great news for me; there are plenty of excellent Chinese chicken wing recipes (when I was little we'd fight over the wings, which my Dad always assured us were where the very tastiest, most succulent meat was), and I have an artery-clagging love for Buffalo wings with blue cheese dip and celery. I decided to break into my bottle of Frank's, and pay no attention to the calories.

You'll need to joint your chicken wings. It's extremely easy; you just need a sharp knife. This wing is whole - spread it out and look for the two joints. Mr Weasel, taller, stronger and kinder than me, suggested that his extra height would make the jointing easier. Shamefully, I stood back, beaming, and let him do it. I really don't enjoy handling raw chicken very much; I'm usually fine with raw meats, but for some reason I find chicken a bit difficult. There's something about the way it smells raw which makes me enjoy the cooked product less. Poor thing; he does work for his supper. The joints themselves are softer than the bone itself, so your knife should penetrate cleanly and neatly.

Chop through both joints like this, and discard the wing tip. You'll end up with a little drumstick-looking bit, and one with two little bones (much like your forearm, if you, like me, can only remember which bits of meat are where on an animal by comparing the animal with yourself).

Heat deep oil for frying to 190c (375f). I use a wok and a jam thermometer for deep frying; the wok means you use less oil, and having a wide container means you can fry more wings at once. Fry the winglets in batches ( I did six at a time) until they are golden brown.

When one batch of wings is ready (they should be about this colour), put them to drain on some kitchen paper in a very low oven, where they can keep warm until all their friends are ready. I cooked fifteen wings (so thirty chopped up wing bits), which should serve three people.

Meanwhile, you can get to work on the blue cheese dip while your sous chef gets on with cutting celery into strips. I used a recipe given to me by an American friend, which I've further messed about with and added to a bit; I think it's pretty much perfect:

1 cup sour cream
1 cup mayonnaise
1/2 cup crumbled blue cheese (use the strongest cheese you can find; for me, this time round it was Gorgonzola, but Roquefort's great in this too)
1 tablespoon cider vinegar
2 tablespoons lemon juice
1 grated shallot
1 clove grated garlic
1 handful fresh herbs, chopped finely (I used parsley and chives)
2 teaspoons Chipotle Tabasco sauce (use regular Tabasco if you can't get the lovely smokey Chipotle version)
Salt and pepper to taste.

Easy as pie; just mix the lot up together.

Now warm half a bottle of that Frank's hot sauce, transported across continents wrapped in your knickers like precious jewellery, with half a pat of butter. When the butter is melted, whisk it all together. Pour the lot over the crispy little winglets in a deep bowl, and toss like a divine salad.

Serve with the blue cheese dip and the sticks of celery. You'll make a terrible mess; have lots of napkins on the table.

I really must find out who the hell this Frank fellow with the sauce is, find him and shake his hand.
