Tartiflette

Please do not serve this to people on diets.

Tartiflette is a dish from the Savoy region of France, where they take their dairy products very, very seriously. Despite its extreme good looks and fantastic taste, it’s not actually a traditional recipe – it was invented in the 1980s by the union of Reblochon cheesemakers as a way to popularise the cheese. Since then, it’s become popular throughout the region, and different recipes have proliferated. This is my take on it.

At heart, and as the Reblochon cheesemakers intended, this is an absurdly creamy potato gratin with a whole cheese sitting on top of it. The nutmeg and thyme in here make the cheese sing, the rich Marsala makes the cream a velvety thing of beauty, and the sweet shallots and salty, smoked bacon infuse the whole dish. Serve with a salad and some crusty bread. (The salad is there so you can pretend you’re eating healthily.)

Reblochon is hard to come by here, so I have used a Camembert. You can use any soft, washed-rinded, reasonably stinky cheese (an Epoisse would work equally well). To serve two for supper, with enough for lunch tomorrow, you’ll need:

8 potatoes (I used Vivaldi, which are firm and creamy when cooked)
3 cloves garlic, crushed
1 pint crème fraîche
12 rashers smoked streaky bacon
6 shallots
½ wine glass Marsala
1 Camembert
3 cloves garlic
1 teaspoon fresh thyme
Butter
Nutmeg
Salt and pepper

Preheat the oven to 200°C.

Chop the shallots into small dice, and cut the bacon into dice the same size. Saute in a little butter until the shallots are sweet and the bacon browning at the edges. Set aside. Peel the potatoes and slice them as thin as you can. (My new mandoline has made this the work of a couple of minutes, and I’m yet to injure myself on it, so I’m still recommending you go straight to the cookware shop and buy one. A plastic Japanese one is very inexpensive – mine was £5 – and works splendidly.) Arrange one overlapping layer of potato slices in the bottom of a heavy baking dish which you have buttered generously, then sprinkle over the thyme, a grating of nutmeg and half of the crushed garlic. Scatter over half of the bacon and shallot mixture, then spread half the crème fraîche over the top. Repeat with another layer, then put a final potato lid on the top.

Slice the cheese in half along its equator, and cut each half into quarters. Arrange the pieces on top of the dish. Pour the Marsala over the dish, dot with butter, season (don’t use too much salt – you’ll get plenty from the bacon and the salty cheese) and bake in the hot oven for an hour, or a little longer – test to make sure that the potatoes are tender. It’s advisable to put a tray under the dish to catch any drips.

This is very rich. Make sure your salad has a tart dressing to offset the extreme creaminess of it all, and dig in.

Otak-otak – spicy Malaysian fish patties

This is a cold-weather otak-otak. In Malaysia, you’d be wrapping your fish mousse in banana leaves and grilling the filled leaves over a charcoal fire outdoors. In England in January, you’re going to be wrapping it in home-made banana leaves (tin foil and greaseproof paper), and, unless you’re the masochistic sort who doesn’t mind hauling the barbecue out in the sub-zero night, dry-frying in a pan on the hob.

This recipe still shouts loudly that it’s from Malaysia; it’s packed with zingy spice. If you’re somewhere where they are available, use the banana leaves and add some galangal and candlenuts to the sambal (the paste at the start of the recipe), and some slivered Kaffir lime leaves to the fish mixture – even if you’re not, I think you’ll find this surprisingly authentic. You’ll need:

Sambal
1 ½ teaspoons blachan (fermented shrimp paste – available in Chinese supermarkets and from Seasoned Pioneers)
5 sun dried chilis
4 cloves garlic
2 knobs ginger
Zest of 2 limes
1 stem lemongrass
5 shallots
2 teaspoons turmeric

Fish mixture
6 mackerel, skin and bones removed
1/2 wine glass water
1 tin coconut milk
1 teaspoon sugar
2 eggs
2 teaspoons coriander seeds, roasted
Salt

Put all the sambal ingredients in a blender, and whizz until they’re a paste. Set them to one side. This will pong – blachan is very strong, and when it’s raw has a distinct and non-charming smell of dead things. Suspend your disbelief and keep cooking – it starts to smell better very soon. Remove your finished sambal to a bowl.

This sambal can form the base to a lot of Malaysian recipes – it’s strong, and it’s delicious. You can vary the amount of chili that you use depending on taste (I used a lot here – these are chilis that I bought in Malaysia last year, and they’re not particularly strong). As you become more used to the flavour, you may find yourself wanting to use more blachan. It is very strong – I keep ours in the garage, in case I offend the in-laws.

Remove the skin and the spiky backbone from the mackerel. In Malaysia, this would be a threadfin – Sainsbury’s don’t carry threadfin, so you’re stuck with mackerel. Any meaty, oily fish will work well. If you have two kittens, the skins will find a good home if you chop them up and stick them in a bowl. Put the flesh in the food processor with the water and blend until you’re left with a pale puree.

Add the coconut milk, the sugar, the eggs, coriander and salt. Pulse until everything is combined, then add the sambal you made earlier and process until you end up with a thick paste.

Cut rectangles of foil and greasproof paper measuring 15 x 30 cm. Put a piece of greaseproof on top of a piece of foil and lay three dessertspoons of paste down the centre. Fold everything up carefully. It’s not meant to be airtight; the packets are there to help your otak-otak both steam and grill, so you’ll have a lightly steamed mousse with a golden, grilled bottom.

Put your little packets in a frying pan without any oil over a medium flame, and toast them for between ten and fifteen minutes, until the mousse is wobbly but firm. Serve with rice and imagine you’re sitting in a Malaysian restaurant with zinc-top tables and dripping rainforest outside.

Sweet roast winter vegetables

Outside it’s dismal. The garden is kitted out in a million shades of brown and dark grey. So how is it that vegetables at this time of year are so brightly coloured? Right now, I can buy fresh, dark red beetroot, bright orange butternut squash, and darkest green winter herbs like rosemary and sage. The vegetables in season at this time of year have an added benefit – they’re full of the sugars they’ve been saving up all year, so they are sweet and delicious.

Beetroot is a much maligned vegetable. Unsurprising, really; I can’t think of many things which benefit from being drowned in malt vinegar. We used to be served it at school, and God, it was revolting. The holiday in France when I was 9, where I was served a plate of crudites including some raw, grated beetroot, was a revelation. Beetroot in its natural state is sweet, juicy and earthy. If you’re only used to the pickled stuff and you see a bunch on sale raw, take it home and experiment with it. You may give yourself a delicious surprise.

Whole bulbs of fennel are on sale at the moment as well. Sweet and fragrant, fennel cooks to a delectable crunch, and here, where it’s roasted in white wine and goose fat, it’s just beautiful. I’ve used sweet onions (Vidalia) – these onions are not as easy to come across in the UK as they are in America, but Sainsbury’s are carrying them at the moment with a recommendation that you use them in salads. They’re so full of sugar that they roast to a caramel perfection. I’m roasting a couple more onions in this than we’re likely to eat tonight – they’re excellent cold too.

To serve three hungry people or four preoccupied ones, you’ll need:

1 butternut squash, quartered lengthways
1 bulb fennel
6 sweet onions
4 raw beetroots
1 bulb garlic
1 handful thyme
1 handful sage
1 handful rosemary stalks
5 anchovies
¼ bottle white wine (I used a Chardonnay)
1 teaspoon coriander seeds
3 tablespoons goose fat
2 tablespoons maple syrup
Salt and pepper

Wash the beetroot and cut the tops and bottoms off. Cut ends like this will allow the edges to catch and caramelise. Cut the squash into four lengthwise, and slice the fennel roughly (into about five pieces). Divide the garlic into cloves – don’t peel them.

Peel four of the onions and trim the roots and tips off, then push a knife through them so they are nearly quartered, but still held together at the bottom. Stuff each nearly-quartered onion with thyme, making sure there’s a good amount of salt sprinkled over the cut surfaces. Chop the rest roughly.

Put all of the vegetables into a baking tray with the anchovies on the bottom. The anchovies will not make the dish taste fishy, but they’ll give everything a rich, dark background flavour. Pour over the wine and drizzle with whole coriander seeds, maple syrup and goose fat. Strew the rosemary and the thyme over the top and put in the oven at 180°C for an hour and a half, or until the edges of all the vegetables are golden brown.

The wine and juices will have made an alarmingly pink sauce. Serve the vegetables with some crusty bread to mop up the liquid, and drink the rest of that bottle of wine.

Clinical canapes

Being related to a doctor is a wonderful thing, but those of you who aren’t can buy your own drugs paraphernalia at the chemist’s. Nothing is guaranteed to concern your guests more than arriving to find you injecting home-flavoured vodka into a couple of giant punnets of cherry tomatoes.

These little guys are, by design, very sharp. Be sure not to have any vodka yourself before you start this; you’ll need all your faculties clear and lucid in order to avoid spicy vodka-finger.

I made a Bloody-ish Mary base by mixing nearly half a small glass of unflavoured vodka with half a glass of lemon vodka, the juice of two limes and two teaspoons of wasabi. You need lots of spicing; only a little of the mixture goes to flavour each tiny tomato.

Carefully insert the needle at the place in the tomato where the stalk was attached. Squeeze down on the plunger gently until you can feel the little tomato swell and become stiff. Serve in a great big bowl, warning guests that these are not precisely tomatoes.

Here is an equally tasty option for needle-phobics. Unfortunately, I put this canape together after a few too many tomatoes, so it’s not as pretty as the first batch was. The first seeded, skinned tomatoes were diced attractively. The layers were neat and not smeary. The baby basil leaves were not all oily. Still – it still tasted great, and they’re very easy to make. You’ll need:

1 loaf white multigrain bread, sliced
1 bulb garlic
1 pat butter
1 pot fresh pesto
2 tubs soft goat cheese
1 punnet tomatoes, skinned and deseeded
Basil

Simmer the chopped garlic in the butter for fifteen minutes until it is soft, and the butter is infused with the scent. Use a rolling pin to roll flat the slices of bread, and cut out fifty circles of the squashed bread with a cookie cutter. Brush each side with the garlic butter and bake in a hot oven for around 15-20 minutes until the little rounds are crisp and brown. Once they have cooled, you can keep the garlicky bases in an airtight box for a few days, and they won’t lose their crispness.

Score the skin of the tomatoes in a little cross at the base, and pour boiling water over them straight from the kettle. This should loosen the skins so that you can peel them off easily. Chop them into four and throw the seeds away. Dice the tomato flesh.

Spread each crisp round with a layer of fresh pesto, a layer of goat cheese and a sprinkling of diced tomatoes. Garnish with basil and eat quickly to keep the crunch.

Frickadellen – a fabulous meatball

Sometimes, the best recipes come about by sheer accident. This was one of them, and if you make anything from this blog this month, you really should think about making these moist little meatballs – they’re fast, completely delicious and very easy. So easy I feel a little ashamed.

Frickadellen, a Teutonic cross between a meatball and a burger, are little patties made from white meats, usually veal and pork. I had been poking around in the fridge, wondering what on earth to do with half a bowl of olives, some randomly purchased vegetables and some bread which was on the verge of going stale, and came up with this. The results really had no business being this good. Clearly the little god who works the refrigerator light was smiling on me. Try making these the next time you feel the need to sacrifice a wilting lettuce and an about-to-burst tomato to him.

You’ll need:

1 pack good sausages
1 egg
3 slices soft white bread
1 red pepper
6 spring onions
2 cloves garlic
½ cup olives
A grating of nutmeg
2 dried chilis
1 teaspoon coriander seeds
2 chicken breasts

Skin the sausages, and put them in the food processor with everything except the chicken breasts, and whizz until you have a rough paste. Add the chicken breasts and pulse until they’re chopped roughly, mixed in with the other ingredients. Form round patties about the size of a ping-pong ball and saute (I used some bacon fat left over from breakfast’s patented hangover cure, some very crispy bacon sandwiches). Turn regularly for between 10 and 15 minutes, and serve hot with rice and a salad.

The olives keep everything moist (use black or green ones preserved in oil, not in salt, and make sure they’re de-stoned); the coriander seeds pop, full of flavour, in your mouth; the bread gives the meatballs a beautifully tender texture; and the red pepper makes everything sweet and juicy. Delicious.

My guilt at the easiness of preparing these meatballs was soon realised. I had a sneaking suspicion that food this good should involve suffering. It just wasn’t my suffering – immediately afterwards, Mr Weasel, washing up, nearly chopped his thumb off on the Magimix blade. It now has three macho-looking stitches (administered by my Dad, a GP with a delicate touch and a good line in sympathy for the poor sod who has to live with his daughter). No photographs, in that I am hoping that you will want to keep coming back to read this blog, and I suspect you’ll be put off by extreme clinical detail.

Happily (I think), Mr Weasel has said that he’d cheerfully chop most of the other thumb off if it means he can have these Frickadellen a second time. I think that’s probably as good a recommendation as I’m going to get. Enjoy these, but be careful about what sharp-edged, curved bits of steel might be lurking under the bubbles in your sink afterwards.

Lettuce wraps

Every country has a dish it thinks is Chinese. These dishes don’t originate in China, but are often good enough to be celebrated and enjoyed. In the UK, made-up Chinese food includes crispy ‘seaweed’ (deep-fried, shredded greens served with fish floss) and the ubiquitous chop suey. Americans can point at that peculiar sweet mustard, Crab Rangoon (no self-respecting Chinese dish contains cheese), and General Tso’s chicken.

The lettuce wrap is another of these mongrel dishes, but it’s so good that you can easily forgive it its roots and embrace it. Preferably with tongue and teeth.

To serve four people, you’ll need:

4 chicken breasts
1 inch piece of ginger, diced
4 cloves of garlic, diced
8 spring onions, sliced
1 red, yellow or orange pepper, diced
1 can water chestnuts, diced
3 sticks celery, diced
5 dried shitake mushrooms, soaked in boiling water and diced
1 teaspoon sugar
1 wine-glass Chinese rice wine
4 tablespoons oyster sauce
2 tablespoons soya sauce
1 teaspoon cornflour
1 teaspoon sugar
Pinch of MSG (as usual, leave this out if you must, but read this first)
1 teaspoon sesame oil
1 large lettuce (I used a Cos)

Put the chicken in a blender, and pulse gently until it’s chopped finely. You’re aiming for a texture like mince here, not like slurry, so be careful.

Stir-fry the ginger, garlic and spring onions together for three minutes, until their fragrance is filling the kitchen. Add the chicken and the cornflour, and stir-fry until the chicken is all white. Throw in the diced vegetables, stir-fry for another two minutes, then add the rice wine, the oyster sauce and the soya sauce with the MSG and sugar. Let the liquid ingredients start to bubble, and when the cornflour has made the sauce glossy and thick, stir in the sesame oil and transfer the mixture to a warm bowl.

Serve by spooning into the bowl of a lettuce leaf. I used a Cos lettuce, partly because of the charming spoon shape of a Cos leaf, but mostly because my choice was extremely limited; it’s near-impossible to buy whole lettuces these days, the whole world having gone mad for pre-mixed salads in bags.

Wrap the leaf around the hot, textured filling, and then wrap your mouth around the whole thing.

Pan Bagna

I’ve just bought a new mandoline, having noticed that I was avoiding cooking as much gratin as I would like in order to avoid the slicing. Unfortunately, you’ve already read my very best gratin recipe, so I put my mind to other dishes which might involve a lot of delicate slicing of hard vegetables.

Pan Bagna is Provençale for Big, Wet Sandwich (actually bathed bread, but Big Wet Sandwich is more descriptive). It’s big, it’s wet, and it’s full of delicate slices of sunshine; olives, garlic, peppers, artichoke hearts and all the best bits of Provence.

You’ve spent years trying to stop the tomatoes in your sandwich making the bread wet. This is a recipe where you want them to make the bread wet. You want the bread drenched in olive oil, tomato, the golden liquid running off freshly roast peppers, the scent of garlic and savoury juices.

You can make this without a mandoline, but the slicing will take you longer. Make your pan bagna the night before you plan to eat it so that the flavours can mingle and the bread soften. To feed three people (or two obnoxiously overweight ones) you’ll need:

1 large loaf of good, rustic bread
½ a cucumber
8 tomatoes
12 radishes
6 artichoke hearts in olive oil
8 anchovy fillets in olive oil
2 shallots or 1 small red onion
2 red or yellow peppers
8 black olives
2 teaspoons of capers
2 cloves of garlic
Pepper
Olive oil

Quarter the peppers, put them in a dry frying pan until charred, and slice into strips. Slice
the loaf (I used a baguette-shaped one – round loaves work well too) in half along its equator. Pour olive oil all over each of the cut sides of the bread, and rub it in with the back of a spoon. Spread a crushed clove of garlic on each of the cut sides – the oil will help it spread evenly.

The oil-pouring stage was the stage at which Raffles the cat decided to do some kitchen-based leaping. He ended up with an Ayurvedic-style stream of olive oil running onto the top of his head, and now looks like an advertisement for cat Brylcreem. It appears to be hard to lick the top of your own head, so we are hoping his sister notices and helps him out.

Lay the oily, garlicky bottom slice on a piece of clingfilm large enough to wrap around a very big sandwich. Slice all the vegetables thinly, and build up layers on the bottom slice of bread. (There’s no set order to do things in here, so you can use your imagination.) This may require some engineering skill; this is a lot to fit into one baguette, and you may find it helpful to chock the slice of loaf with teaspoons to keep it level. Make sure the anchovies (chop them), olives and capers end up in layers towards the middle so their flavour can permeate the whole sandwich.

Anchovy-haters are allowed to substitute tuna.

When your sandwich is full of all the ingredients, put the lid on and wrap tightly in cling film. This is a two-person job. When you’ve got a cling-film cocoon, wrap that in tin foil. Then put the whole thing in the fridge, with weights on the top.

MFK Fisher advocated sitting on your sandwich over an afternoon or so. Feel free to do this if you do not care particularly for your soft furnishings. Otherwise, leave the sandwich, weighted, in the fridge overnight, unwrap carefully, slice and serve. Have a good munch in the snow and pretend you’re in Nice.

Whole sirloin of beef with prosciutto, porcini and herbs

Christmas dinner for twelve people is a tricky one. Several of the people present admitted that they didn’t like turkey, some had moral issues around the consumption of ducks (no, I don’t get it either) and no goose this large was going to cook without being dry. Was any bird outside the Emperor Penguin going to be big and festive enough? Would those who had been to see March of the Penguins forgive me? Were dead, French-trimmed penguins readily available in Cambridgeshire?

Eventually I decided that this was unlikely, and remembered that cows come in handy, family-sized joints. I ran straight to Waitrose and ordered a whole sirloin of beef – at £60, this works out as surprisingly good value when you realise it will easily serve twelve with ample leftovers.

Cambridge boasts an excellent Italian delicatessen in Balzano’s at 204 Cherry Hinton Road (01223 246168). I spent a further £25 on 40 large, paper-thin slices of prosciutto, and £15 on ten small, Italian packs of porcini (cepes). I love Balzano’s. It’s a short walk from my work, and they sell every antipasto you can think of: huge jars of artichoke hearts in olive oil, enormous Kilner jars of anchovies, tubs of fresh pesto, roast vegetables and tiny capers. They also stock excellent Italian preserved goods: Barilla pastas and sauces, tins of traditional fennel sauces, nut and chocolate confections and a healthy line in fascinating little biscuits.

Having bought Balzano’s out of Panforte di Siena and the oddly German (but still welcome) packs of lebkuchen, I carted my treasure home, refrigerated it all until Christmas day, then drove it to my parents’ house first thing in the morning and got cooking. Mum and Dad’s house made sense in that they have twelve chairs to my six, a large table to my small one, an Aga and a conventional oven, as well as four gas hobs and two Aga ones. Mr Weasel and his family followed on later, wisely keeping out of my harried way.

I rolled out two sheets of greaseproof paper large enough to wrap the sirloin in, and laid the ham in a thick, unbroken layer on top of it. I soaked the mushrooms for half an hour in hot water from the kettle, and, keeping the soaking water aside, fried them in quarter of a pat of butter with a bulb of chopped garlic until the liquid had evaporated, leaving them glossy, then added the juice of a lemon and a glass of Marsala. When this had bubbled away as well, I spread the nearly dry mushrooms and garlic on the ham, reserving a small handful, and covered them with a thick layer of of chopped tarragon, parsley and sage. I placed the raw sirloin on top of the layered prosciutto, mushrooms and herbs, and used the greaseproof paper to wrap it in them, Swiss-roll style, folding ham over the ends and tying the whole bundle tightly. I put it in a large roasting dish, with another bulb of whole, unpeeled cloves of garlic tucked in around it.

These photographs, incidentally, are the reason you’re reading this a week and a half after Christmas. I remembered all the meat but forgot my camera, and had to use my Dad’s. The bits of handshaking which meant the pictures from his camera would end up on my computer ended up rather more complicated than they needed to be . . . still, they’re here now, so read on.

A beef sirloin will cook amazingly fast, even one of this size. Mine needed an hour and a half in the top (roasting) oven of the Aga, which runs at around 190c. The best way to tell how yours is doing is to use a meat thermometer, stabbed into the middle of the joint before you start to cook. Keep an eye on the thermometer from 45 minutes into the cooking time. When the needle reaches ‘rare’, take the joint out and rest it on a serving dish for ten minutes.

I deglazed the juices and sticky deposits in the pan to make an intense, rich gravy with the mushroom stock, the reserved mushrooms, half a pint of Marigold vegetable stock, another two glasses of Marsala and half a pint of crème fraîche, all simmered until reduced and silky.

I served the beef with King Edward potatoes roasted in goose fat, Brussels sprouts (steamed and served with roast chestnuts), petits pois a l’étoufée (peas cooked in a light vegetable stock with lettuce, butter and spring onions) and Yorkshire puddings, cooked in muffin tins.

After a starter of gravadlax, with a homemade dill sauce and foie gras with quince jelly, we launched upon the main course. And a happy silence fell on the chattering table, which is the best Christmas compliment I could have had. I’m already looking forward to next year, when perhaps I will get my hands on that penguin.

Slow-simmered Chinese beef and fried rice

Slow braising in soya sauce is one of the best things you can do with stewing meat, making it scented, tender and melting. Here, I’ve used some whole spices, oyster sauce, sugar, garlic and ginger to turn some cheap cubes of stewing beef into meaty gold.

To accompany it, I’ve broken out my packet of Chinese sausages (lap cheung). These are a sausage rich in pork fat, sugar and anise, preserved by wind-drying. You can buy two kinds of Chinese sausage; these, which are red in colour and made from pork and pork fat, and the darker ones, made from duck meat and liver. I’ve put the rest of the packet in the freezer, to use another day in some steamed rice. Today’s sausage is going in some stir-fried rice.

The beef is easy – all its deliciousness comes from long, slow simmering. You’ll need:

1 lb cubed stewing beef
1 bulb of garlic, halved
3 slices ginger
2 dried chilis
2 stars of anise
1 stick of cinnamon
2 tablespoons sugar
2 tablespoons oyster sauce
2 tablespoons soya sauce
1 wine glass Chinese rice wine
1 teaspoon sesame oil
Water to cover

Put all the ingredients in a heavy-bottomed pan and simmer very gently for two to three hours, until the meat is tender. Top up with water if the pan starts to look dry.

The fried rice is full of simple, assertive flavours. I used:

4 Chinese sausages, sliced thin
3 cloves of garlic, sliced
2 inches peeled ginger, julienned (cut into matchsticks)
8 spring onions, sliced into circles
1 pack shitake mushrooms, sliced
1 large handful frozen peas
1 large bowl cold, pre-cooked rice
2 eggs
1 teaspoon sesame oil
2 tablespons soya sauce

Stir fry the sausage slices, moving everything round quickly over a high heat until they give up some of their fat, then throw in the garlic, ginger and spring onions and stir fry for three minutes. Add the mushrooms and peas and continue to stir fry until the mushrooms are soft and cooked. Crumble the rice with your hands into the wok. It’s vitally important that the rice is cold from the fridge; warm rice will go gungy and come apart. Cold rice will keep its grains whole and keep its texture. Stir fry the rice until it’s all piping hot, then make a well in the middle so you can see the bottom of the wok, break the eggs into it and use your spatula to scramble them in the well. Stir the cooked egg into the rest of the rice, add the sesame oil and soya sauce, stir fry for another twenty seconds, and serve.

Steak rub and a new gadget

I’ve nothing very complicated to cook this evening; Christmas has reduced me to a withered husk. Those wanting to see what Christmas lunch looked like will have to wait until after the New Year, when I next see my Dad, who currently has custody of the memory card with all the photos from Christmas on it. (Stay tuned. The main course was, if I do say so myself, fantastic as only £100 of ingredients can be.)

So tonight, rather than rolling whole sirloins of beef up in herbs, making complicated things with pastry or setting fire to the fumes coming off hot Cointreau-soaked Christmas puddings, I’m just doing some steak with some chips out of the freezer. I want something easy and tasty tonight, so I’ve made a cross-continental steak rub using Asian, European and American ingredients.

I’ve mixed two tablespoons of soft brown sugar, one tablespoon of a good five-spice powder (this is from Daily Bread in Cambridge, where they mix it themselves. Its ingredients include aniseed, fennel, cinnamon, cloves and pepper), an extra tablespoon of cinnamon, a teaspoon of Maldon salt and a teaspoon of ground chipotle chilis. (I get mine in America when possible, and take it home in that bulging suitcase of contraband, but fellow Brits can buy dried chipotles online in the UK at the Cool Chile Company and grind them up in a coffee grinder or Magimix. The Cool Chile Company also do excellent chipotles in adobo and a very nice chipotle ketchup.) I then added two tablespoons of liquid smoke (also from America – if you can’t get your hands on any, use a couple of tablespoons of cooking sherry, which will taste completely different, but fantastic). I rubbed the paste into the steaks, and left them to marinade for half an hour, then drained them and fried them with diced shallots in a knob of butter for four minutes each side until medium rare. Delicious.

Those shallots are where my new gadget comes in. Among a Santa’s sack of presents from Mr Weasel’s obscenely generous family was a little package containing an Alligator Onion Cutter. I’m not usually one for single-purpose gadgets, but this device is a thing of genius.

I’ve always had a problem with onions and shallots; I’m extremely susceptible to the vapours coming off them, and usually spend half an hour at least after chopping a particularly strong one looking like I’ve just been punched in the face. Tearstains and unusual swellings are not a good look for dinner. I’ve tried the business with the swimming goggles, the trick with the teaspoon between the teeth, and chopping them underwater. None of these ideas has worked very well; I steam up, lose bits of onion and weep, weep, weep the night away.

I also suffer from pretty mediocre knife skills; I may be fast, but I’m not very tidy, and my slicing and dicing is competent but uneven.

My new onion cutter eradicates both these problems, and reduced my shallots into perfect, tiny dice in three seconds flat. No fumes. Gorgeous little cubes which make me look like I know what I’m doing with a knife. And, best of all, it rinses clean or goes happily in the dishwasher. Keep one hand over the blades while slicing to keep the onion or shallot from popping all over the working surface, and you’re away. Hurrah! My next experiment will involve a potato, the Aligator and some hot, deep fat. And some of that chipotle ketchup.
