Pea and edamame falafel

Pea and edamame falafelFalafel? Well, kind of, although I don’t think anyone from the Middle East, or anywhere else where they’re a staple, would necessarily agree with me. I threw this together after eating something advertised as a pea falafel wrap at Harvey Nichols cafe in Leeds last week. I felt the Harvey Nicks version could do with some work – it was underseasoned, underspiced and crying out for a squeeze of lemon and some mint, but had the makings of something really rather good, as I discovered after some experimentation with a bag of peas and some soybeans back home.

Frozen peas and edamame cooked like this make a very quick store-cupboard supper, and the results taste as if you’ve spent much, much longer on them than the few minutes these take to throw together. This is a great dish to whip out when you’ve been landed with an unexpected vegetarian guest (like my poor parents-in-law, who were told that the foreign students they were hosting a few weeks ago were Germany’s only veggies barely a day before they arrived), and a good burger substitute for vegetarian barbecue-goers. Lacto-ovo vegetarians who do it for moral reasons befuddle me. What do they think happens to the calves who were going to drink the milk, and the chickens who weren’t female enough to lay eggs? I can guarantee you that they’re not all prancing in the sun and nibbling on tender shoots, shepherded by the consciences of unimaginative veggies. Cue comments storm.

Anyway. These falafel make for a great side-dish, or a main event on their own. Stick them in a wrap, once they’ve cooled, for an easy and uncharacteristicly healthy lunch, if you have any left over.

To make 12 burger-proportioned falafel, you’ll need:

200g sweet frozen peas (the frozen ones are almost always sweeter than fresh, unless you’re picking straight from your own garden and shelling immediately)
100g frozen edamame (soy beans) without pods
1 medium onion
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 small handful (about 20g) fresh mint leaves
50g fresh breadcrumbs
Zest of 1 lemon
Juice of ½ lemon
1 egg
Salt and pepper
Olive oil to fry

Defrost the peas and beans, throw all the ingredients into the bowl of the food processor and pulse until you have a rough paste. Use your hands to bring the paste together into patties about the size of a burger.

In a non-stick pan, heat the olive oil until it shimmers and starts to give up its fragrance. Slide in the patties and cook for a couple of minutes per side, until golden on the outside. Serve with a big dollop of Greek yoghurt and some lemon to squeeze over.

Freemasons Country Inn, Wiswell, Lancashire

I’d been invited to lunch at the Freemasons Country Inn in Wiswell, Lancashire, by the fine folks from American Express and the London Restaurant Festival. This year’s LRF sees chefs from ten London restaurants pair up with ten restaurants from all over the country to produce gala menus on October 10, especially for American Express card holders. (If you don’t have an American Express card, get a friend who does to book for you.) There are some big names taking part – Alain Roux, Raymond Blanc, Mitch Tonks, Richard Corrigan – alongside some rising stars you’re bound to be hearing much more about very soon.

Wiswell is a tiny village, arranged precariously along a single-track path that curves up a dripping wet Lancashire hill. I got lost on my way there, and had to stop at a petrol station in nearby Clitheroe to ask for directions. A man wearing a fuzzy jumper in the crisp aisle knew exactly where I was meant to be going: he’d just had his wedding anniversary meal there. (“Seven courses! You’ll eat like a king; it’s a magnificent restaurant.”) Locally, the Freemasons has developed a huge and loyal following, as evidenced by the fact that they were packed to the gills with diners on a soaking Monday lunchtime in August, traditionally one of the restaurant industry’s slowest months.

I was here with Matthew Foxon from the Criterion, who has been paired up for Amex’s shindig with Steven Smith, the Freemasons’ chef. They met precisely two hours before I rolled up, and in that time had become such firm friends that I found myself addressing them as one chefly entity called Matt’n’Steve. They announced in unison: “This is a good pairing. We’re on the same wavelength.” They have lots in common besides the haircuts: a very similar approach to sourcing ingredients, to the importance of texture in a dish and to flavour combinations. Steven’s team prepared lunch from the Freemasons’ menu, Matt’n’Steve developed a dish for October while I watched, and I ate myself silly.

The Freemasons was not what I’d expected from a country pub. Downstairs, it’s pure pub: a bar, wooden tables, stone flags, shootin’-huntin’-fishin’ prints and the odd bit of taxidermy. (The upstairs houses a more formal dining area and two private dining rooms.) At a first glance, the menu looks like solid, pubby, starch-and-stodge stuff. If that’s what you’re after, you’ll be disappointed. Steven has subverted the standard pub menu and made it a jumping-off point for some of the most elegant restaurant food I’ve eaten this year. These were jewel-like, complex presentations, with each beautiful element on the plate calculated to complement the whole dish. No bangers in a bun here. Sourcing is a matter of pride for this kitchen – by the end of the meal I knew the first name of the man who grows the restaurant’s beets, the life history of the piglet who sacrificed himself for my superb terrine (and that of his parents), and the precise bit of Scottish coast my scallops had lived on.

Steven draws inspiration from the best bits of English cuisine and from the local area. He’s a Lancashire lad, and knows the countryside and its suppliers intimately. There’s a nod to the local Asian population in the spicing of the scallops; some traditional piccalilli and pork scratchings are given a very unconventional treatment; and what looks like a walnut whip but turns out to be a light-as-air puff of caramelised meringue. A pork jelly sits on the plate with no pork pie in sight, and works as a salty, mellow foil to slivers of sweetly pickled fennel. And who knew that pear and beetroot were such a good flavour match?

Once service was over, I was invited to the kitchen to have a look at one of the dishes the two chefs are developing together for the LRF event. Matt was busying himself about some exquisitely delicate sheets of pasta while Steve piped a coil of leek and potato purée onto a pasta base, dropped a fresh yolk into the centre and topped the lot off with another pasta sheet to make a large piece of ravioli, which was poached briefly so the egg was barely set. Matt had brought a large and handsome truffle up on the train with him (I feel for the hungry souls who shared a carriage with him) – it made a heady sauce, drizzled around the pasta and some more leeks with another leek purée, with more of the truffle grated over the top. I’ve seldom seen such focussed attention as Steve gave that single raviolo – and it did them both proud. I was caught swiping at the yolky, truffly, leeky bits on my empty plate with a finger and sucking it, and was roundly laughed at; I felt somewhat less than proud, but it didn’t stop me going back for more.

Wiswell is easy to get to from either side of the Pennines (I was coming from a weekend over the hills in Leeds; Manchester is close by, and the M6 is right on the doorstep), and this restaurant should be a must if you’re in that part of the world. Book early; it’s guaranteed to be packed out. (See the links at the top of this page for booking details.) If you’re down south, try to get an American Express card-holding friend to grab you a table for the 10-10-10 event, where you’ll be able to try several of the dishes above – but get in quickly, because tables are selling out fast.

Rhubarb sorbet

Rhubarb sorbetLast winter, my friend Kate and her family moved into an enormous and ancient pile of a house in one of the nearby villages. You know the sort of house:  the street is named after it; it’s got medieval bits, Georgian bits and Victorian bits; there are wonderful corners all over the place for the kids to play hide-and-seek in; and there’s a huge, leafy garden I’d give my right arm for.

Part of Kate’s garden appears to have been looked after, a century or so ago, by a kitchen gardener with a fondness for rhubarb. Rhubarb crowns grow very slowly indeed, but Kate’s rhubarb patch, having been around for a good long while, is now about the size of a couple of transit vans. No one family can consume that amount of rhubarb in one year without severe intestinal upset, so a few months ago she gave me a few kilos of stalks. Since then, they’ve been sitting, chopped and cleaned, in the freezer, coming out occasionally to be stewed and consumed with custard. Time to ring the changes – here’s a non-custardy application of rhubarb which is grown-up enough to be wheeled out at your next dinner party. There’s a lovely balance of tart and sweet in this sorbet, and it’s a glorious colour. You’ll find it works well as an in-between-courses palate cleanser, or as a dessert. Leave any custard well alone; this stands up on its own.

To make about a pint and a half of sorbet, depending on your rhubarb’s age and water content, you’ll need:

1kg rhubarb
200g caster sugar
30ml water

Put all the ingredients in a saucepan and simmer very gently with the lid on until all the rhubarb has collapsed into a greenish mush (about 20 minutes). Remove from the heat. Strain through a jelly bag, a fine sieve or a muslin-lined colander for several hours or overnight and let gravity do its work, without poking at the mixture – you want the juice and only the juice. You’ll notice that the solid bits of rhubarb left in the jelly bag look a lot like wet hay; all the pinkness will be in your juice.

Eventually, you’ll have a bowl of pink, fragrant syrup. Chill the syrup in the fridge for at least six hours.

Follow the instructions on your ice-cream maker, or pour the syrup into a freezerproof box and put straight in the freezer, removing after an hour to attack with an electric whisk to break up the ice crystals. Freeze for another thirty minutes and whisk again, then keep repeating every thirty minutes until you have something that’s recognisably sorbet. This sorbet will keep in the freezer for months, but I doubt you’ll be able to leave it alone for that long.

Crisp sweetcorn fritters

Sweetcorn frittersEverybody gets those days when happiness is not achievable without some fried chicken, and I wanted something horribly unhealthy to accompany it. Remembering fried chickens past, especially the ones I ate about a year ago at Lolo’s, a soul food restaurant in Phoenix, I decided that something with a sweet/savoury finish and a bit of spicing that would stand up to being drizzled with my own approximation of Lolo’s hot sauce was just what the chicken breasts I was cooking needed. The resulting fritters are crisp and puffy, and fall somewhere between an Indian pakora, a Thai fritter and a New Orleans beignet.

These are not not awfully good for you. Don’t make them too often.

To make ten once-a-year fritters and some killer honey hot sauce, you’ll need:

1 large egg
60g plain flour
60ml milk
½ teaspoon salt
1 teaspoon baking powder
340g tin sweetcorn OR kernels from 2 fresh cobs sweetcorn
4 spring onions
1 teaspoon ground turmeric
1 teaspoon fennel seeds
1 teaspoon coriander seeds
1 small handful (about 15g) fresh chives
Oil to fry

Sauce
150ml bottle Frank’s original hot sauce (available in several UK supermarkets or online)
3 tablespoons runny honey

IngredientsBeat the egg into the milk. Grind the spices in a mortar and pestle with the salt, and mix with the flour, baking powder, chives and finely chopped spring onions in a large bowl. Use a whisk to beat the egg and milk into the flour mixture until you have a batter. Use a spoon to stir the corn kernels through the batter.

Drop heaped tablespoons of the batter mixture into your deep fryer, and cook a couple of minutes on each side, until crisp and golden.

To make the sauce, just combine the honey and hot sauce in a small pan and bring to a simmer, stirring well as you go. Cool before slathering generously all over your chicken and fritters. You can rebottle any extra.

Singapore noodles with miso chicken

Singapore noodles with miso chickenSingapore noodles are another dish with a misleading name. They don’t appear at all in Singapore, despite their ubiquity on Hong Kong, UK, US and other Chinese restaurant menus. It’s unclear where the recipe originates, but it’s now a take-away standard. I suppose it makes sense; Singaporean and Malaysian food is characterised as being a bold, mish-mash of cultures, and this dish fits that description well.

Given that noodles in this style are something of a made-up dish, I allowed myself some latitude when I couldn’t find all the ingredients I wanted to use. You’ll see beansprouts in the ingredient list below, and they do make for a much more interesting mouthful, so include them if you can. There appears to be a beansprout drought in these parts at the moment, so you won’t see any in the photo. I’ve used a wheat/egg ramen noodle rather than the traditional rice vermicelli you often find in restaurants; this isn’t such an odd choice, and you’ll find many UK Chinese restaurants using a wheat noodle, but some do prefer vermicelli, so substitute them if you’re a particular fan. As always with curry powder, find the best you can. There’s a world of difference between those jars from Sharwood’s and Bart’s and a good curry powder from a small producer. Malaysian curry powder is preferable here, if you can find it, for its complex and herbaceous aromatics.

The chicken, sweet and intensely umami, is a lovely foil to the noodles. Marinate it overnight if possible. The marinade, boiled through thoroughly, makes a fine dipping sauce to go alongside this meal, or can be spooned over in small quantities. The sauce is packed with flavour, so you won’t need much. You can, of course, cook the chicken separately from the noodles; it’s fantastic cold and makes a very good sandwich filling or, diced, a Chinese salad addition.

To serve two, you’ll need:

200g thin ramen or rice vermicelli
6 spring onions
1 medium red onion
1 red pepper
1 carrot
75g beansprouts
3 cloves garlic
2 tablespoons of  your favourite curry powder
30ml rice wine
2 tablespoons light soy sauce
Small amount of oil to stir fry

Chicken
2 skinless, boneless breasts
2 tablespoons white miso
2 tablespoons rice wine
2 tablespoons oyster sauce
1 tablespoon light soy sauce
1 tablespoon soft brown sugar
1 teaspoon sesame oil

Marinate the chicken overnight in all the chicken ingredients (or for at least six hours). Remove from the marinade and grill under a medium flame for 8-10 minutes per side until done while you cook the noodles. Put the remaining marinade in a little pan and bring it to a rolling boil for a couple of minutes, then put to one side until you are ready to serve.

Chop the spring onions into coins, chop the garlic, slice the onion, dice the pepper and cut the carrot into thin diagonal slivers. Prepare the noodles for stir-frying by following the instructions on the packet. In your wok, take a little groundnut or grapeseed oil, and fry the spring onions, garlic, onion and pepper with the curry powder over a very high heat, moving everything around all the time, until the onion takes on a little char at the edges (only a few minutes). Add the noodles, carrots and beansprouts to the wok. Stir-fry until everything is well mixed, then add the liquid ingredients. Stir through again, turn the heat down and put a lid on the pan for 2 minutes before serving.

Dish the noodles out and slice the chicken breasts on the diagonal before placing them on top of the noodles with a little of the cooked marinade. Serve immediately.

The Secret Larder: Riccardo Prosecco evening

Secret restaurants will not be a new idea to you if you’re a London foodie – they may be a little more of a surprise if you’re not based in the capital. Over the last couple of years in particular, I’ve met more and more people running small, uncertified restaurants from their home dining rooms. You’ll hear them referred to as supper clubs, underground restaurants and secret restaurants; the usual procedure will involve you buying a ticket at one of these word-of-mouth places’ websites, and being emailed an address to turn up at the day before the meal. Many of the secret restaurant folk also write at the extremely extroverted end of the food bloggery spectrum. (You have a food blog either because you are a genteel introvert who wants an excuse to spend the day with a spatula and a keyboard, or because you love to share your sticky, greasy passion with as many people as you can. I like to feel I fall comfortably in the middle.)

The Secret Larder is one of these outfits operated by James Ramsden, a man with a smile and manner of the kindest, cockle-warmingest sort. (Check James’ website for details on the restaurant and bookings.) He wears an impeccable white apron, and has a heap of the kind of soft curls that are fun to ruffle on a ten-year-old. He has a brother, also radiating waves of loving-kindness – this family could start a cult – who was on waitering duty the night I visited; a sister also helps on other evenings and provided much of the artwork in the room we ate in.

Clearly, in order to operate a secret restaurant, you need an eye-bleedingly spectacular space to run it from.  An Edwardian découpage screen separates the kitchen from a vaulted living/dining area full of soft chairs covered with throws and cushions, and limed, pickled and painted wooden furniture. Fairy lights twist around the cast iron rods holding the high ceiling in place, and there are books of the sort you’ll want to steal all over the room. A good conversation starter, actually; I know I’m afflicted with a horrible urge that makes me stock the bookcases downstairs, where people might actually see them, with some of the more interesting crags and peaks of the Upton book mountain, and I’d love to know if that copy of Take a Buttock of Beefe, the two (two!) copies of the Silver Spoon cookbook and the books on Joseph Beuys had been positioned with the same venal impulse.

Although the Secret Larder can cater for dozens of covers, the night I visited was much more intimate; a table was laid for eight. The room was velvety with candles, those fairylights and the lovely luminosity that only a bloodstream full of fermented grape juice can give a lighting scheme. The books, the pictures, the furniture, the lights – just the sort of environment calculated to get people talking even before we all got settled on the food and drink.

I was, along with some other food bloggers, here as a guest of Prosecco Riccardo, who were providing the evening’s wines. The brand is new in the UK, and the owners of the vineyard, held up by weather over Verona, arrived an hour or so later than the rest of us, at first appearing slightly nervous about the restaurant being – you know – in somebody’s flat. This secret restaurant thing has not yet percolated as far as the sunlit hills of Conegliano-Valdobbiadene. Happily, any lasting resentment against the British left over from their awful flight with BA was instantly soothed by the application of a fillet of fresh, oily mackerel on an earthy base of artichoke purée and a glass of their own fizz. I was reminded that my Italian needs some work. I trained years ago as a classical singer, and this meal really brought home to me that a vocabulary consisting of  vaguely operatic stuff like: “Lo! Gentle shepherd! A thieving magpie! What is life without thee, Euridice?” and phrasebook stuff like: “I would like two tickets for the exhibition and a hot chocolate, please; oh, and some stamps for the United Kingdom,” does not serve you well at a dinner with wine producers. As always, though, a big smile and some elegant miming will mitigate most of the damage.

Prosecco hasn’t always been a sparkling wine; until World War 2, the Glera grapes went to make a still wine, and it was only after some bored experimentation with a demijohn in the 1940s that the standard Prosecco became a fizzy one. The still wine is still produced, but only makes up about 5% of production from the region (which now has Denominazione di Origine Controllata status), and seldom makes it out of Italy. We tried a couple of bottles of this fizz-free Tranquillo, and it knocked my socks off. At 11% ABV with the odd bubble from natural fermentation, it will remind you of a Portuguese Vinho Verde. All tart apples and flowers, it’s a lovely wine against the sort of dense earthy flavours we were tasting in the mackerel with its artichoke puree and shallot marmalade.

It’s a challenge to construct a whole menu around Prosecco, but James worked it in seamlessly. The Brut we started with – easy-drinking, not too dry, with a very jolly bubble – worked as an aperitif and performed really well against ramarino in culo, which translates loosely as “rosemary up the bum”. Little balls of steak tartare are seared on the bottom, with a spear of rosemary pushed into the still-raw top giving the whole mouthful a resinous lift. Gorgeous. The (perfectly seasonal, as was most of the meal) strawberry salad worked pepper flavours from the balsamic dressing and fresh leaves of rocket against the Brut in a way that had me making a note to try matching the wine to peppery dishes myself; I’ve spent far too long treating Proseccos as wines to drink without food, or as something to make Bellinis with.

A switch to the Tranquillo for the fish and the back to the Brut again for pork belly, served with chicory and a punchy salsa verde. My notebook has a drop of olive oil on it from this point in the evening, and a scrawl which I can’t interpret. I think I am trying to make the point, sozzled, that this is a very nicely prepared slab of pig, the fat rendered out over hours of slow cooking, the meat tender and herby and the flavours balanced, especially with that sharp salsa verde, the bitter chicory and the mouth-filling richness of the pork itself. What I have actually written appears to be “Not too swiney! Fat – whee!” Perhaps I should consider a dictaphone for these things in the future.

James produced something so good for dessert that I considered kidnap. Peaches caramelised in Marsala pushed into the bottom of glasses were topped off with a boozy zabaglione. And he’d made cantucci. And terrific coffee. A glass of Riccardo’s grand cru, the Cartizze Valdobbiadene, was pushed into my hand. I have to admit to a certain haziness to proceedings at this point, but I have scribbled “refined, sweeter, minerals, small bubble” just underneath the thing about the pork, and seem to remember enthusing about what a superb digestif it made.

I will (and did, thanks to pints of Prosecco – I shouldn’t have, it was rude and I apologise) admit that something about being served in someone’s home, especially when they are a mere ten feet away and so much of your conversation is about the food, is a little uncomfortable. I ached for James and Will to take a seat and join us in putting the culinary world to rights rather than slaving over a hot pig. This, though, is just a result of the fact that they made the whole evening’s experience feel like going to a friend’s house for a dinner party. I can’t recommend a visit highly enough, especially if you’re going to be sharing a table with friends – something about this set-up makes conversation flow, and the food is joyous.

Malaysian fried chicken – inche kabin

Inche kabinI’m on a bit of a Malaysian kick at the moment. I’ve not been back in six years, and it’s getting to me. The best thing to do in these circumstances is to head for Rasa Sayang in London’s Chinatown, where, if you half-close your eyes and relax, you can imagine you’re eating in Kuala Lumpur. (In one of the clean bits.) Failing that, you can get out your wok.

To serve four, you’ll need:

1 jointed chicken OR 200g chicken wings
2 tablespoons soft brown sugar
4 tablespoons coconut milk (this is an occasion on which the brands with emulsifier work best)
2 heaped tablespoons curry powder
2 inches ginger, grated and squeezed for the juice
2 tablespoons light soy sauce
50g rice flour
Oil for deep frying – I used grape seed oil, which has a very high smoke point and a neutral flavour

Try to find a Malaysian curry powder like Linghams which is meant for chicken – they have a very specific and delicious flavour. Failing that, Bolst’s Madras curry powder is always an excellent fallback.

Marinate the jointed chicken or wings in the sugar, coconut, curry powder, ginger juice and soy overnight in the fridge. If you were in Malaysia, you’d take the chicken outside at this point and lay it in the blistering hot sun for half an hour or so, until the marinade had dried onto the meat, and then fry. Fat chance of that in Cambridgeshire.  So I use a tip I picked up from one of my cousins, and dredge the wet, marinaded meat with rice flour. Rice flour gives this dish a fantastic crunch, and also retains that crunch when the chicken is cold, making this a brilliant selection for a picnic.

Heat enough oil in your wok to half-submerge the pieces of chicken (or use your deep fryer), and bring to a frying temperature (about 180°C/360°f). Fry the chicken, turning regularly, for about 12 minutes, until cooked through and tender.

Serve immediately, or cool and eat as part of a cold supper or picnic. Worcestershire sauce is a common accompaniment for this, but I much prefer a bowl of soy sauce with some green bird’s eye chilli snipped into it to dip the chicken pieces into.

Beef rendangIt’s my firm belief that every culture in the world has at least one dish which looks like something the cat dragged in, ate, digested, and left as a gift on the hall carpet twelve hours later. Beef rendang is Malaysia’s offering to this noble pool.

I’ve not come across a dish like rendang anywhere else in the world. Beef is simmered in a thick mixture of spices, browned coconut and coconut milk until nearly dry, soaking up huge amounts of flavour during the simmering process; the cooking method turns from simmering to frying as the mixture reduces and the oils from the coconut leach out. You end up with a thick, rich, dark brown sauce, packed with herbs and sweetness from shallots and roasted coconut. It’s a dish that takes a while to prepare, so make plenty and freeze what you don’t eat immediately.

CoconutYou’ll need to tackle a raw coconut for this recipe. Opening coconuts doesn’t have to be anything like the palaver we seem to make of it in the UK – all that business with towels and hammers. As you can see from the picture, my coconut was bisected neatly. All you need to do to achieve the same thing from yours is to hold it over a bowl, and, using a meat cleaver or large knife (cleavers are available very cheaply at Chinese supermarkets, if you have one in the neighbourhood), tap hard with the blunt edge along the equator of the coconut – the pointy tuft at one end and the three “eyes” at the other are your north and south poles. Keep tapping with the blunt side, not the blade, as hard as you can, turning the coconut as you go, and once you’ve circled it about five times (by which point you will be sweating and swearing that all this work hasn’t made a blind bit of difference) the coconut will split neatly in half, the juice inside falling into your cleverly pre-positioned bowl. It’s magic. Give it a shot.

A word on that coconut juice. It’s not the same thing as coconut milk (the stuff you find in a can), which is the grated white flesh of the coconut, moistened and squeezed. Coconut juice is very pleasant on a beach somewhere when your coconut is green and straight off a tree, a nice man has sliced the top off it with a machete, and you have a few shots of rum and a straw; but once your coconut has turned brown and been shipped to the UK, it will be bitter and horrid. Drink it if you must. If you’re smart, you’ll pour it down the sink.

Coconut milk is a different matter. For this recipe, it’s more important than ever that you buy some without emulsifiers – you’ll be using the thick, creamy part of the milk separately from the more watery part. I always buy cans of Chaokoh, a Thai brand. If you’ve difficulty tracking it down locally, you can find it (and a paradise of other Chinese, Malaysian, Korean and Japanese ingredients) at Wai Yee Hong, an oriental supermarket in Bristol with an internet shopping arm – I order from them every couple of months, and they’re super-reliable.

To serve four, you’ll need:

1 coconut
600g beef topside
1 tablespoon soft dark brown sugar
1½ teaspoons tamarind block (surprisingly enough, I found some at Tesco)
10 blanched almonds OR 2 candlenuts, peeled
2 teaspoons turmeric powder
2 Kaffir lime leaves
2 stalks lemongrass
1 in piece galangal
1 in piece ginger
10 small shallots
3 fresh red chillies
8 dried red chillies (look for Malaysian cili kering in an oriental grocer)
2 cloves garlic
1½ tablespoons palm sugar (or soft dark brown sugar)
2 tablespoons dark soy sauce
1 can coconut milk
Salt and pepper
Boiling water

Open the coconut according to the instructions above. Pry the white flesh away from the shell, and use a sharp knife or a vegetable peeler to remove the brown skin from the flesh. Grate the white flesh and dry-fry, stirring regularly, until dry and dark brown but not burned.

While the coconut is frying, soak the tamarind in enough boiling water to cover, poking with a fork until the tamarind is soft. Pick out the seeds.

Cut the beef into pieces and marinade in all but 2 tablespoons of the toasted coconut, the tamarind and its liquid, two teaspoons of sugar and a teaspoon of salt. Set aside while you prepare the other ingredients.

Put the remaining toasted coconut in the bowl of the food processor with the almonds, turmeric, lime leaves, lemongrass, galangal, ginger, peeled shallots, chillies and garlic. Whizz until everything is reduced to a fine paste. Put the paste in a thick-bottomed saucepan with the runny, milky part of the coconut milk, 100ml boiling water, the palm sugar, another teaspoon of salt, a generous grating of pepper and the dark soy sauce. Stir well and bring to the boil over a moderate heat. Add the meat with any juices, and bring back to a simmer. Continue to cook, without a lid, for an hour, stirring frequently to prevent burning. Most of the liquid will have reduced away by this point.

After an hour, add the creamy part of the coconut milk to the mixture and stir well. Add a lid and continue to cook over a reduced heat for another hour, stirring occasionally. The finished rendang should have a thick, dense sauce, and look oily, the fat having come out of the coconut, almonds and coconut milk to fry off the other ingredients.

Cookery for Invalids, C Herman Senn, 1900

Cookery for InvalidsRegular readers of Gastronomy Domine will be aware of my vintage cookery book habit. I’m hoping to make something of a semi-regular feature of posts about some of these books; if you’ve an interest in food and in social history, an elderly cookery book is a goldmine. Cookery for Invalids, written in 1900 (mine is a later edition), is a book of “recipes and diet hints for the sick room”, and will make you gladder than you’ve ever been that you live in an age of antibiotics, insulin and ubiquitous refrigeration.

Senn, born in 1862, was a chef and a prolific writer of food books, producing 49 books in his lifetime – a remarkable feat given the limited scope of the Victorian and Edwardian kitchen in England. (He had an eye for a new angle; I would love to get my hands on a copy of his Cooking in Paper Bags and Ye Art of Cookery in Ye Olden Time.) By far his most successful book was Cookery for Invalids, first published in 1900, which ran to many editions and seems to have been published at least until the 1930s. (Penicillin was finally purified and tested on humans in 1941, and, of course, many presses closed for the Second World War – I haven’t seen any evidence of printings of the book in the 40s.) Senn himself practised as an early nutritionist as well as a chef, working as Examiner in Sick-Room Cookery at several London hospitals; he was also employed by the government to set up training for army, navy and prison cooks. This was a time when nurse training at the larger hospitals included short courses in what was termed Invalid Cookery, to be practised on their convalescent charges. A wealthy family would employ a children’s nurse for their perfectly well offspring. While dandling, disciplining and doing a bit of mild educating, she was also expected to produce nutritious and stimulating meals for the children; training in dietetics was considered a great boon in such a nurse.

Diet was recognised as a contributing factor in illnesses like diabetes and gout, and was believed to be an efficient treatment in illnesses like neurasthenia (a disease we don’t recognise any more – it was that which affected swooning ladies in the drawing room) and rheumatism. There was a vogue for nutrition, and a huge industry in patent foods like Benger’s (a nourishing wheat and milk preparation); we still recognise plenty today, like Horlick’s, Bovril and Lucozade.

Cookery for Invalids contains a brief explanation of the make-up of foods: protein, carbohydrates, fat, salts (what we would describe as minerals), vitamins and water; a discussion of the suitability of various styles of cooking for the sick (horrible imprecations on those preparing fried food here); a series of recipes; and a list of special diets for those suffering various named, and usually pretty horrible, illnesses. Some of this stuff is curiously modern. I was particularly surprised to see that the daily calorie intake dictated by Senn is, at 2500 kCal, exactly the same as that the NHS tells us to keep today in 2010 – although admittedly, Senn’s patient doing “hard work”, when a lot of what is done today with machinery was still done by people, was allowed to increase his daily intake to between 4000 and 9000 kCal. Writing a good 70 years before Dr “Fatty Fatkins” Atkins, Senn suggested that carbohydrates were the most important part of the diet to cut out in slimmers. His approach to the sick is compassionate, kind, and non-patronising; the pretty tray on the book cover (above) is illustrative of his insistence throughout the book that food should “please the eye as well as the palate”; lack of appetite is a hurdle in most of the illnesses being treated. “The patient’s wants should be studied, and their wishes gratified as far as possible…in feeding a patient do it gently and neatly.” Cleanliness is paramount. NHS hospitals could learn a thing or two.

The Edwardian invalid’s lot was not, all that said, a happy one. While the awful drinks made from burned toast soaked in warm water that you see in the sickroom sections of Victorian cookery books don’t get a look-in here, the Edwardian convalescent was still expected to be bibbing heartily at mug upon mug of beef tea; it was thought to be easy to digest and full of delicious nourishment while “preventing the digestive organs from doing undue work”. As such, Senn recommended it for all patients.

The method is shudder-inducing. The nurse would shred a chunk of lean beef with a couple of forks, discarding gristle and fat, and soak the resulting beef tartare in a big jar of cold water for an hour or so before straining the resulting mush through muslin “with a tiny pinch of salt added”. Lucky invalids might have their beef tea warmed through. “Beef tea must never boil. If it approaches boiling point it is spoilt.” There are eight recipes for beef tea (slow method, raw method, quick process, iced, jellied and so on) here. Variety may not be the spice of life after all. Spice, in fact, was out of the question – far too stimulating. “Stimulants are in many cases positively harmful…spices should be avoided, and where pepper is allowed it must be used sparingly.” Wine, however, might be allowed with the doctor’s permission; “it often tempts the appetite…when other and more solid food would fail”.

Gruels were easy to digest, and this archetypical invalid dish is given its own section. Click on the picture to enlarge this page of gruel recipes to a readable size – besides what you can see here, there are several more pages of gruels, one of which has a wine-glass of sherry poured into it. Thoughts of Oliver Twist aside, sherry gruel sounds abominable. When you’re done with your gruel, “A raw egg beaten up and mixed with a cup of milk, tea or coffee, makes an excellent and nourishing drink.” I shall refrain from comment.

It’s not all so bad. There are palatable and light fish and chicken preparations, a nice little quail on toast, and a herby poached rabbit in Bechamel; unfortunately, there’s also a sandwich filled with raw mutton and sugar, and a custard made with Marmite. I can imagine the patients of owners of this book conniving to die early just to get away from the cooking.

So far, so frivolous. But all your sniggering postmodernity counts for nothing once you get to the final part of the book, which discusses specific illnesses. By the time Senn was writing, the control of type II diabetes through diet (as we do today) was well understood. His diabetic menu would stand up to scrutiny today; and saccharine, discovered in 1878 and commercialised very shortly afterwards, was a real blessing for the Edwardian diabetic. The diet for gout is also similar to what a doctor might suggest today, and the “reducing” diet for the obese is dull but looks effective. But what we will understand as the futility of trying to cure tuberculosis in the pre-antibiotic period through diet, fresh air and rest, is heartbreaking. The week’s menu for the consumptive here on the right (again, click to enlarge) is, as long as you were able to stomach calves’ brains three times a week, pretty palatable, but entirely useless for curing the patient. The massive weight loss that was one of the outward signs of the disease is all the diet tries to address; an earlier page on TB clings to the ancient superstition that red fluids like wine were good for replacing the blood coughed up, along with minced raw meat.

I’ll leave you with some of the advertisements from the front and back of the book – judging by the prices on the products and the graphical style of these ads, I think this edition is from the 1930s. You may recognise some of the products here – you can still buy Shippam’s meat and fish pastes (I used to love the fish paste in my school sandwiches), Borwick’s baking powder and McDougall’s flour. God only knows what became of the Stuffo stuffing company, and you won’t see isinglass outside the brewing process these days; it would have added a distinctly fishy tinge to your jellies, but was much cheaper than gelatine.

An earlier edition of the book (there are very few differences – the most notable one is probably the substitution of the word “corpulency” in the older text with “obesity” in the one I own) has been digitised and can be read online here. Smoked salmon and laverbread canapes

CanapesThe fine folks at Kinvara smoked salmon sent me a big goodie bag full of their organic Irish salmon last week. I get through quite a lot of smoked salmon at home (damn the expense, it’s full of brain-feeding, joint-lubricating goodness), and I was enormously and very pleasantly surprised at just how good the Kinvara fish was. The smoke is a gentle one, letting the flavour of the salmon itself sing, and the firm slices of fish have a robust and delicate flavour all at once. I don’t mention all the foods I get sent to try on this blog, but this one was a doozy, and I’ll be ordering more from them (smoked salmon by post – how splendid is that?) shortly.

Something this good deserved a special-occasion recipe, so here, just in time for the next party you host that’s posh enough for canapes, are some classy little nibbles to impress your boss with.

To make 20 canapes, you’ll need:

100g smoked salmon
50g pancetta cubes
1 x 125g tin laverbread (for more on laverbread, see this post – I am charmed by the fact that my spellchecker suggests that what I really wanted to type here was “weaverbird”)
75g medium or fine-milled oatmeal
1 large onion
1 jar salmon roe
1 jar lumpfish roe (or caviar, if you really want to push the boat out)
250g crème fraîche
Bacon fat (you really should be keeping a jar in the fridge; it’s amazing stuff for adding flavour) or olive oil to fry

Dry-fry the pancetta in a large, non-stick frying pan until golden, and remove to a mixing bowl, keeping the fat it has released in the pan. Chop the onion finely and saute it over a low to medium heat until dark gold and sweet. Dice the salmon and add it with the onion, laverbread and oats to the pancetta bowl.

Use a spoon to stir the mixture until everything is well blended. If you want to serve these canapes in the evening, you can prepare the dish up to this stage earlier in the day and refrigerate the mixture until you are ready to assemble them later on. Use your hands to make 20 little round patties from the mixture, and fry them in a couple of tablespoons of hot bacon fat or olive oil until golden, turning once (about ten minutes).

Arrange the crisp patties on a serving dish, and put a dollop of crème fraîche on top of each one. Spoon some salmon roe on half of them, and some lumpfish roe on the other half. Serve warm.
